SPICY COUNTRYSIDE CHICKEN CURRY

Ingredients:
½ kg Kampong chicken
1 potato (cut into wedges)
Ginger-garlic paste
2 tbsp plain chilli powder
2 tbsp meat curry powder
1 tsp turmeric powder
450-500 ml thick coconut milk
1 chicken stock cube
Salt to taste
Oil for cooking
Tempering Spices:
2 small cinnamon sticks
3 star anise
4 small bay leaves (daun salam)
6 cloves
Handful of fresh coriander leaves
Curry and mint leaves (daun pudina)
3-4 red & green cili padi (slit)
Steps:
Heat up some oil, add in the tempering spices.
Then, add 1 ½ tbsp ginger garlic paste. Sauté until fragrant, 1-2 minutes.
Now, add a little salt, the potatoes and chicken pieces. Mix well, then add 2 tbsp each of the chilli and meat curry powder, and 1 tsp turmeric powder.
Also, add in the curry leaves, pour in the coconut milk and cook over medium-low flame.
Allow it to cook.
Check if the potatoes are cooked. Add in the chicken stock cube. Simmer until both chicken and potatoes are cooked 👌
Taste for seasoning and garnish with more curry leaves, coriander and mint leaves and slit chillies. Turn off the flame.
