This dish is made with such precision and skill. But I have to say that all those peppers would tear me a new one. Beautiful presentation of the finished product.
Wow even though I am a school trained chef, these huge squid still amaze me how little innards and little "waste" there is. I don't think there is another sea creature, heck maybe even land animals too that have such a high yield of edible meats. I mean no bones, tiny beak, tiny stomach and guts, no inedible parts like a head, etc. Scrape out a few bits, peel off the tougher skin and slice, tenderize and cook properly, that's it. I also love seeing these videos of the variety of different types of kitchens one sees. I love the song birds in the background, the huge basket with an array of herbs, aromatics and veggies. Add in the huge pans and roaring fire it makes me jealous! The only thing I didn't like was the last yelling in the background for a bit. Hahaha. One last thing, the videos would be awesome if the person filming and eating in the end, if they would share their thoughts and review of the food they just ate. We never know if its good? Bad? Too spicy? Tough? Yuck? Etc...lol. I wanna know how it tastes and if its tough? Just my thought. I will say that I can certainly appreciate the chefs willingness to not rush the dish and you can tell that he has pride in what he does. I couldn't eat that due to so many Chiles but it was a beautiful dish and surely full of flavor that's is if your taste buds aren't melted away after one bite. Lol
Damn spicy isn't the word seeing all those Thai Chiles being mashed whole...seeds and all! Then even more chili's sliced whole.... That is a blow your head off spicy! Serious next day bathroom meltdown for sure! Damn. Lol
