  • SPICY MIX-VEGETABLE BRIYANI 😋😋😋

    Ingredients:
    1 cup long grain basmati rice
    (Pre-soak for 20 mins, then drain)
    Ÿ - 2 cups lukewarm water
    2 tbsp ginger-garlic paste
    1 tsp briyani masala (optional)
    Salt to taste
    1 cup mixed frozen vegetables
    Πeach of red, green, yellow capsicum
    œ lime (juice)
    Handful of cauliflower florets
    1 potato, diced
    A:
    5 bay leaves
    8 cloves
    1 cinnamon stick
    B:
    1 tbsp chilli powder
    1 tbsp curry powder (meat curry powder)
    1 tbsp vegetable stock powder
    Salt to taste
    C:
    5 cardamom pods, crushed
    1 tbsp black pepper, crushed
    80 ml rose water OR 1 tbsp rose essence
    For Garnishing: D
    Heat up some ghee, and fry the onion, cashews and almond flakes until golden brown.
    Fresh coriander and pudina (mint) leaves
    Raita: Diced cucumber, plain yogurt and salt to taste. Serve it chilled 😋
    Steps:
    Heat up 2 œ tbsp ghee, add in A, ginger-garlic paste, cauliflower, potatoes, and allow to cook, 2 minutes.
    Then, add in B, capsicum, briyani masala, rice and mix.
    Turn off the flame, then add in the frozen vegetables, mix well before transferring everything into the rice cooker.
    Squeeze some lime juice, add in C and check for seasoning. Add in some coriander and pudina leaves and cook.
    Garnish with D. Enjoy it with cold raita!
