I’ve been endeavoring to improve my state of mind by listening to self-affirming messages (on Jason Stephenson’s YT channel) during the night, and more recently to Alan Watts lectures on various YT channels. I’m still struggling on feeding myself, but am starting to turn things around. I just learned about an app called Cronometer, that I’ve been using for about a week. It enables me to discover what nutrients my vegetarian diet is deficient in, so I can focus on what I need to eat more, or less of. I’ve learned that an easy way to boost my Omega 3 and calcium levels is to add a healthy amount of Canola oil and calcium citrate to my soups and chili, for example. Today I’m thawing out some curried pea soup made with the delicious recipe on this channel, that I modified by using 3 times the amount of split peas to boost the protein content. I just ordered a couple of fermenting crocks, and am looking forward to trying some probiotic recipes on various websites. Another change is to switch from the cyanocobalamin form of B12 supplement to the biologically active methylcobalamin form. Hopefully these changes will bring me into a more balanced state of physical and philosophical wellbeing. I hope you and everyone who reads this are doing well, and thanks again for your kind message.

I’ve never had a tofu recipe that I found edible, but this one is stellar. Highly recommend making this!! ⭐️ I’m making this now with a couple of substitutions, but it should be very similar. Can’t wait to try it! I’m not a vegetarian, but I’ll try any vegan recipe that sounds intriguing. My chili oil is macadamia but & I’m adding chipotle peppers in adobo sauce because I had it in the freezer & only had 3 dried chili peppers. Also, a fresh Serrano pepper. I do like it hot 🥵 😋

I learned by accident when a roommate put my tofu in the freezer that it gave it a meaty texture for better tasting dishes. I put it on a plate and freeze until solid. Then l thaw it completely and squeeze all the liquid out. I dice or shred it to get the size and texture l want. Firm or extra firm works best.

Nice disclaimer at the chart to fend off the chilli officionados. I make a similar vegetarian one. 100% agree on cooking the tofu with the soy sauce at the start, makes a huge difference. I also recommend adding a tablespoon of chocolate powder after the tomatoes to give it a richer colour and a glossy finish.

I make a killer vegan chili pretty often, and your recipe looks great. I'm definitely going to incorporate some of your ideas. When I make chili powder, I grind the chilis with cinnamon, cumin seeds, coriander seeds, allspice, cloves, oregano, black pepper, and turmeric into a chili/curry powder variant.
Could you please provide the amount of each ingredient? Your mix using common herbs and spices seems very attractive, ias I avoid buying exotic ingredients I might only use once.
@@DulceN I do it differently each time, depending what's on hand, and I don't measure anything, but a teaspoon each, except a half ts black pepper, 6 cloves, mixed with six dried guajillo chilis would probably come close. Double everything for more. Or just follow Yeung Man's recipe.
Weird coincidence. I make chili with real Chipotle peppers for the first time 1 day before this video, and as I was eating leftovers, I see this video. I don't know about the lentils, I used beans, and added corn... and used Jackfruit for the "meat", with artichokes as well (had never tried). It was ok, but I'll try the crumbled tofu next time. I had also blended the peppers after boiling them, but toasting and powdering them seem more efficient.

Use fresh tomatoes instead of canned, and smoke them, if you can, or fire roast them if not, or oven roast them if you can't smoke or fire roast them. Major improvement over canned!! 2. Fire roast or roast red bell peppers to puree and add to the sauce. 3. Sub sundried tomatoes for tomato paste. 4. Add chopped pecans- adds so much to both the texture and the flavor. I made this and loved it. My wife hates chili and also loved it. Try leftovers on fries! So good. It's recommend a little more chili powder mix, about 3T. Use a dry red wine. I used a bit to many sweet elements but it was still killer.

As a Cincinnati native, I appreciate you normalizing the addition of chocolate and cinnamon to a chili recipe. :-) I've made vegan versions of it before, but the red wine, chili oil, and lentils put a whole new spin on it. Will try this soon before the weather heats up!

quick question on the chili oil: when I make it I stir the strained avocado oil into the jar and stir well - I let it mingle overnight and then use. do you strain into another jar after letting it blend overnight of just leave it all in the original jar?
You could do either 👨🏻🍳🙌🏻 Sometime I store it strained and other times I’ll leave it. Depends on your personal preferences (including spices in dish or not)

Same, i just use tofu but then you run the risk of it dissolving to nothing, which i don't think is as risky with the brown lentils.

quick question on the chili oil: when I make it I stir the strained avocado oil into the jar and stir well - I let it mingle overnight and then use. do you strain into another jar after letting it blend overnight of just leave it all in the original jar?
You could do either 👨🏻🍳🙌🏻 Sometime I store it strained and other times I’ll leave it. Depends on your personal preferences (including spices in dish or not)
