LEARN HOW TO MAKE AN EASY LEBANESE INSPIRED ZA'ATAR RICE RECIPE WITH ONLY ONE PAN!
LAY HO LAY HO! There's only one thing more comforting than a beautiful bowl of flavourful rice - the fact that only one pan is required ;) Join me in this episode and learn how to make a deliciously easy Lebanese inspired za'atar rice recipe today!
    Ingredients:
    1/3 cup pine nuts
    1 cup basmati rice
    100g extra firm tofu
    1 tbsp avocado oil
    1/2 tbsp soy sauce
    2 tsp dark soy sauce
    3 pieces garlic
    1 red onion
    1 green chili
    1 tomato
    2 tbsp olive oil
    1 tbsp za'atar
    1 tsp sweet paprika
    pinch of salt
    1 1/2 cups water
    5-6 slices lemon
    1/3 cup chopped parsley
    pickled turnips to serve
    Directions:
    1. Heat up a nonstick pan to medium heat. Add the pine nuts and toast for 3-4min. Then, set them aside
    2. Rinse and drain the basmati rice 2-3 times to get rid of the excess starch. Then, set aside
    3. Pat dry the extra firm tofu with a paper towel and place into a bowl. Crumble the tofu with a fork
    4. Heat the pan back to medium heat. Add the avocado oil followed by the tofu. Sauté for 4-5min
    5. Add the soy sauce and dark soy sauce. Sauté for another 2-3min. Then, set aside
    6. Finely chop the garlic, red onion, and green chili. Dice the tomato
    7. Heat the pan back to medium heat. Add the olive oil followed by the red onions and green chili. Sauté for 2-3min
    8. Add the garlic, za'atar, and sweet paprika. Sauté for about 1min. Add the rice, diced tomato, and a pinch of salt. Sauté for another minute
    9. Add the crumbled tofu and water. Give the pan a good mix
    10. Arrange the lemon slices on top of the rice and bring to a boil. Turn the heat to medium low and cover and cook for 15min. Then, turn the heat off and let the rice steam further for 10min
    11. Remove the lemon slices. Add the pine nuts and half of the chopped parsley to the rice. Gently fold over the rice to combine
    12. Plate the rice generously. Sprinkle with a little bit more parsley and serve with some pickled turnips

Oh my goodness, I made it and I cannot describe how yummy it turned out! Like seriously restaurant quality, I just believe how awesome! I didn’t have pine nuts so I just toasted some sesame seeds instead and I used broth instead of water. We ate it with homemade tzatziki, pita and cucumber slices and that went it so so well. Definitely going to be making this again! Thank you SO much for sharing this amazing recipe!!

    thank you! only,
zaatar is not oregano, it is called hyssop and reminds oregano.
the blend is also called zaatar and includes: sesame, salt, olive oil and often also soumak.

Finally tried that recipe and well, it's really good. The pine nuts do make this dish, I think. It's that little extra that elevates the recipe to greater heights. So good. Oh, and I even used chili oil to fry some broccolini that I added instead of tofu... chili oil fits anything. Learning from the best 😅

I work in a Greek restaurant. We use basmati rice. I lightly fry the raw rice with aromatics in olive oil . Now this is where I differ in technique/ratios. I add 1 1/3 cup of liquid to 1 cup of rice (slightly less water than you). I also add oil, which again I didn’t see in this presentation. Bring to boil for 2-3 minutes, use a rubber spatula to dislodge any rice that might want to stick on the bottom, then turn off heat and tightly cover.
I don’t have a specific time to let this steam. It actually stays at serving temperature for a couple of hours, and DOESN’T get “mushy”! Perfect separated fluffy grains. This rice is excellent, as is, or can stand up to reheating in a sauté pan for dishes like “spanacorizo” with spinach and plaki’ (tomato-based) sauce.😊 Definitely will try a version of this with Za’atar

ZA'Atar - essentially equal measures of dried Thyme, Oregano, Sumac and Toasted Sesame seeds. Other variations exist - some have a little wheat, a little salt or made to taste. eg: I have added a little ground smoked chilli to my ZA'Atar which I sprinkle over poached eggs. Occasionally either the Thyme or Oregano maybe swapped out for / with Marjoram. Fab recipe Will 🙂

Another week, another Yeung Man recipe I‘ll cook. Love the addition of Tofu crumble, such an easy way to add some protein. Zatar is is one of my favorite spice mixes, my favorite use so far would be in a salad dressing with lemon and Tahini. I’d probably add a sweet component to the rice, like dates, dried apricots or raisins (sorry 😅) and some more veggies like oven-roasted Harissa cauliflower or a Tahini dip. (I really hope I‘m not offending peeps here).
Had the lentil rice last week and it‘s been a great addition to my collection of recipes. It’s great to see your channel grow!

Just mix it with olive oil and dekus or za‘atar for that matter with cauliflower in a bowl, place in on a tray and let it roast in the oven at 220 Celsius for round about 15 minutes. I find it strange that the Israelis would use such ingredients as Zaatar something that means nothing in Hebrew. So they took over the Palestinian land and their food as well! That’s quite cheeky, don’t you think? The pickled turnip you describe is so indigenous to Palestine and Lebanon. That’s what i discovered during my study abroad year at the American University of Beirut. These countries have a millennial history, unlike Israel an invented colonial country that is barely 75 years .

You are an amazing cook. I have cooked almost all your recipes. One time I cooked your four chicken recipes and your fried rice. My friends came over for dinner and I really got lots of praises. Thanks for your taste recipes.
