Today I'm going to show you how to make overnight oats lemon cheesecake.
With a wholesome crust and a healthy lemon curd topping, it's a dessert that's both satisfying and nourishing.
The oats in the crust provide a healthy dose of fiber, while the ricotta cheese and Greek yogurt in the filling add a protein boost.

LEMON CHEESECAKE RECIPE
(makes 1 serving)
Ingredients:
For the crust:
1/4 cup quick-cooking oats (20g)
1/2 tablespoon chia seeds
1 teaspoon honey
1 tablespoon milk (dairy or non-dairy)
2 tablespoons Greek yogurt
For the filling:
1/4 cup ricotta cheese (60g)
1/4 cup Greek yogurt (65g)
2 teaspoons honey
2 teaspoons freshly squeezed lemon juice
For the lemon curd: (enough for 4 servings)
1/2 cup milk (120ml)
1/4 cup lemon juice (60ml)
2 tablespoons honey, maple syrup, or agave
1 tablespoon cornstarch
A pinch of turmeric
NUTRITIONAL INFO (per serving):
378 calories, fat 10.9g, carb 48.4g, protein 22.1g
Instructions:
Prepare the Crust:
-In a small bowl or jar, combine the quick-cooking oats, chia seeds, honey, milk, and Greek yogurt.
-Stir the mixture with a spoon until well combined.
-Set it aside while you prepare the cheesecake filling.
Make the Filling:
-In another bowl, combine the ricotta cheese, Greek yogurt, honey, and freshly squeezed lemon juice.
-Mix the ingredients together using a spoon until a smooth consistency is achieved.
Assemble the Cheesecake:
-Pour the prepared filling over the oatmeal crust, ensuring it covers the entire surface.
-Smooth the top of the filling to create an even layer.
Prepare the Lemon Curd:
-In a saucepan, combine the milk, lemon juice, honey, cornstarch, and turmeric.
-Whisk the mixture until the cornstarch dissolves completely into the milk.
-Heat the saucepan over medium heat until the mixture thickens and starts to bubble.
-Allow the lemon curd to cool slightly.
Add the Lemon Curd Topping:
-Spoon 2 tablespoons of the prepared lemon curd over the cheesecake filling, distributing it evenly.
-Place it in the refrigerator to cool overnight or for a minimum of 4 hours.

There's a lot of lemon flavor in the zest, so it seems like including maybe a half a teaspoon or so of it in the lemon curd and/or the filling would help.
Sure, that would be just great, just don't prefer to zest store-bought lemons, and homegrown are not available on a farmers market.

Mine is a simpler version. I make my regular overnight oats with chia seeds, yoghurt and lemon extract. I often make them when I get up and chill in the frig before breakfast.

have you ever tried boiling whole oat groats? they are kind of more fresh than dry milled/rolled oat(meal), consider that they also still sprout if you seed them, so you can consider those are still alive in a way. Anyway, they are very good and interesting too cook with also, you should try it.
Not really, but I cook barley occasionally and use in some of our traditional dishes. Do you have any suggestions how to use cooked whole oats?

Yes, I can understand, but this recipe is pretty forgiving, you can use any type of soft cheese you usually buy.
Hi Rolmaguiland, Iâve recently been thrilled with whizzing âcottage cheeseâ in a small food processor to give it a creamy ricotta like texture. Donât get me wrong. I love ricotta cheese, but I also think cottage cheese has more nutritional benefits. Perhaps cottage cheese is easier for you to get where you live? I hope this helps.

You don't use eggs for the top of a cheesecake you use gelatin and lots of people use lemon curd for the top of cheesecake
You're welcome! Love this no bake method, it's just the easier approach to cheesecake, I'm not using cream cheese, or gelatin, so it's a bit softer then a regular cheesecake, which doesn't really matter when you make it in the jar.

I use regular Greek yogurt all the time, I'm just not into these 0% products. Yeah, why not... it's not too sweet, there's oats and cheese, which equals to delicious breakfast.

How'd you make the curd without it curdling? I tried what you said and it ended up curdling the milk for me. One difference is that I used xanthan gum instead of cornstarch because I didn't have any and I read that it was a good substitute. Any suggestions?

I always use fresh lemon juice, but if you have some leftover lemon juice in your fridge, it would be fine too.
Would using ground saffron be better than using turmeric for the color?
You can use both, I just have a turmeric as a regular spice in my kitchen.

Why would it not work? Not that the crust undergoes some very specific reaction, milk is just there to add moisture for chia seeds to puff up and oats to soak it. You can probably add any liquid in there as long as volume is equated

Well, if you can't eat oats even after soaking them overnight, I suggest you dry toast them on the pan for 5-10 minutes before making this dessert.

Also the lemon curd dint harden as much as I would have liked... maybe I should have let it cool longer than 5 minutes before putting in on and in the fridge...? I also used arrowroot powder instead of cornstarch, does that make a difference... it had thickened but not very hard like in a lemon tart...

theres 41 grams of sugar just from the honey a bit more than 8g from milk and yogurt. be transparent and put sugar instead of carbs cause your carb count is way off anyway

The vegan version would be much more interesting. Constantly these planet-destroying breast milk ingredients from cows, that's becoming really unexciting and boring... And no, this way it isn't that very healthy. But the idea is worth to give it a modified try!
