For this recipe I have a 5lb standing rib roast from Certified Piedmontese (bit.ly/3si1Za5). I removed the bones, trimmed off any excess fat and silver skin, and as you can see ended up with a beautifully trimmed prime rib roast.
I used some Grillaholics SPG plus Butter seasoning (bit.ly/3FDllt4) to do what I would consider as a dry brine, and left it on a wire rack in the refrigerator for several hours.
I made the crust from scratch in my food processor with the following ingredients:
- 6oz Parmesan Cheese
- 6oz Romano Cheese
- 3 to 4 cloves garlic
- 1/4 cup loosely packed parsley
- 4 to 5 tsp ground horseradish
- 3 to 4 chunks french baguette (tennis ball sized)
- pinch salt
- pinch black pepper
I used my food processor to get this down in size similar to panko bread crumbs.
Now its time to season it! I used some Bearded Butchers Brock Lesnar rub (bit.ly/3DcfpY0). Then I used some truffle aioli as a binder... you could use dijon mustard, or anything similar. Then I packed all sides (except the bottom) full of the breading and placed the roast on a wire rack.
Into the Camp Chef Woodwind Pro 36 we go at 240F. We are looking for an internal temp of 120F before we do anything else.
Well I ended up on the Camp Chef Apex, but that worked out fine because I was able to sear the roast using the gas burners on the grill. We seared until we achieved an internal temp of 128F, then pulled it off for a 15 minute rest. You could rest longer if you'd like, as far as 30min or so.
As you can see this horseradish crusted prime rib was INCREDIBLE!!! That flavor from the crust pair so well with the prime rib, that it may just be the best Prime Rib Recipe that I've ever come up with!! Boy did we love this smoked prime rib recipe!

Hey Andrew, appreciate the videos! I am struggling to decide between the Camp Chef Woodwind Pro and the Masterbuilt Gravity 800 (With some LSS mods). What are your thoughts on the comparison? I saw Hey Grill Hey did a comparison and the CC resulted in a better looking end product, but they preferred the flavor coming off the Masterbuilt. Your thoughts? Also, the Masterbuilt looks to be using lesser quality materials. What is your opinion on construction and longevity of both smokers?
I plan on doing a cook off between the two next weekend. I’d say that the WW Pro is the closest pellet grill to getting the flavor of the MB gravity series, but I think the MB still has it beat by a little bit. In terms of construction, the Camp Chef beats it all day. In terms of versatility, Camp Chef all day… but that’s with adding the sidekick.
