DELICIOUS 😋😋 PORK SORPOTEL. Goa/Mangalorean style

  • PORK SORPOTEL Our & your all time favourite Prepared in Goans/Mangalorean style. It's very famous dish for every Occasions in Goa as well as in Mangalore.
    My Dad was in Goa for several years when he was Single. Sometime he used to cook for us mostly all Goans style dishes, Meat Roasted, Bafath, Sorpotel, Meat Salted, Curries & several types of dishes.
    He was a great Cook at his time. Mostly marriages was happening in everyone's their own houses (not in halls) & mostly in big functions & occasions everyone was inviting him, he was specially specialised for Cooking Pork dishes & other all type of mouthwatering dishes. Everyone was loved his dishes very much. As well as we used to enjoy a lot.
    Here is the Recipe for PORK SORPOTEL
    ● Ingredients:
    ● "A" Total 4Kgs of Pork
    Meat with other parts
    * 1&1/2kg Pork Meat
    * 1&1/2kg Belly
    * 1kg all Liver, Kidney,
    Heart pcs
    ● "B" To Grind into Masala
    for 4Kgs Meat
    * 20 -25 Kashmiri chillies
    * 15 Bydgi Chillies
    * 3tsp Peppercorns
    * 1tsp Cumin seeds
    * 1tsp Turmeric powder
    * 4 -6 Cardamom
    * 1" Cinnamon sticks -4pcs
    * 20 Cloves or 1tbsp
    * 2" Ginger
    * 30 Garlics Cloves
    * 2no Onions
    * 1/2 cup Vinegar
    ● Optional Masalas (if you like it, it's depend upon your taste, can add in it. (I added it)
    * Small pc Nutmeg
    * Little Coriander
    * Few Cardamoms
    * Small pc Javethri
    * Small pc Star Anise
    ● "C" Seasoning
    * 8 Green chillies
    * 2 Lemon size Tamrind Pulp
    * Little oil to fry
    * Salt to taste
    *6- 8 Onions
    * Few Garlic chopped
    optional
    * Little Ginger Chopped
    optional
    * 2tbsp Bafath powder
    optional if you like
    more spicy
    * 1/2 Palm Jaggery or 2tbsp
    Brown Sugar optional
    ● Method:
    1. First wash meat & other all Pork parts nicely 3-4 times & boil it in sufficient water to remove impurities in it, add 1/2 - 1tsp of Turmeric powder, 1tbsp Salt, little vinegar, 10no of Black Peppercorns, 2 Bay leaves boil it for 8-10mins.
    2. Remove Meat from hot water & cool it aside, cut into small cubes/pieces, keep it aside. Strain stock & reserve it aside to use it in masala later on.
    3. Grind all the ingredients under "B" into fine paste by adding little Vinegar, sufficient water to grind & keep it aside.
    4. Take a broad Pan & roast the Pork small cubes no need to add oil in, it'll release it's own fat fry it for 2-3mins in batches till it's slightly colour changes, do not over fry. otherwise It'll become hard. Drain fat & keep it aside. If you like this fat, you can use it to fry Onions in the same reserved Fat. (I used same fat) Or you can use 2tbsp of Coconut Oil.
    5. Take a big Pan or Vessel, add 2tbsp of Oil & fry Onions till translucent. If need can add chopped Ginger & Garlic it's optional, saute little, add Grounded masala & roast it till it's rawness goes for few minutes.
    6. Now add roasted Pork in it, mix it well, cover lid & let it cook for 5mins.on slow flame. Now add reserved stalk & sufficient reserved grounded masala water, add Salt to taste, stir and mix it well. Keep curry in medium consistency. After a good boil add Tamarind pulp, Green chillies & if need can add liitle Vinegar it's depend upon your sour taste, check salt & add in it. Keep it to cook on very slow flame covered. If you like at last you can add little palm Jaggery it's optional upto your taste. Check everything is perfect Salt, Masala etc. & add it depend upon your taste. (Those who like, can add blood pudding in it for extra taste it's optional)
    7. Cook it on slow flame till done 15-20mins. Taste it & check whether everything is perfect & done.
    8. If you like to keep it, can keep it for one day & cosume it on second day, it'll soak & absorb all the masalas in it or keep it 1hour aside & can serve it with Sanna, Idli or Pav.
    * Preserve it for a long period in deep Freezer & eat it whenever you required .

    ● Note: You can add more Spices for more quantity of Meat. For less quantity Meat use less spices. To get good colour for curry use more Kashmiri chillies and it's less spicy.
    * If you love more spicy add extra Bafath powder 2tbsp in it.
    * Bafath powder can be added in it, it's optional depend upon your taste Taste the masala & add in it.
    * If you doesn't like any spices or Jaggery or Pudding you can avoid, it's optional
