Thanks for mentioning the difference in using waxy versus starchy potatoes. I never understood why mine never crisped up, even while swimming in bacon and sausage grease!

I know this video is 5 years old, but I just came across it. I made it 3 days ago and followed recipe as close as possible. I must have spent at least an hour on this, but well worth it. Delicious! I had leftovers, so I had it again yesterday, today and enough for tomorrow as well. I will make it again. Ron

I just made this for late lunch. It was awesome. One of the most satisfying recipes ever. Breakfast food is awesome and should be eaten at all times. I overloaded the crap out of this burrito and it was falling apart, looked not so good but tasted amazing. :D
To make wrapping a burrito easier I heat up the tortilla in a nonstick pan on both sides for a few seconds. You have to kinda work fast but the heat helps reduce the holes you could poke in the tortilla and helps with the cheese melting quicker.

i was trying to figure out what i wanted for dinner, and breakfast burrito it is! only mine won't be as fancy as yours
Just made this, but used veggie sausages (I don't eat pork) and sweet potato instead of normal, it was soooo good!
a little tip with the tortillas, if you heat them up before you roll them, it will help with folding the edges in without breaking the tortilla. will help it mold around the contents as well

You can use potato hash brown in place of par boiled potatoes to save time. Just a suggestion.

Two questions:
1. How do you know you have a waxy spud vs. a starchy spud?
2. Leaving out the salsa, how well do these freeze?
Jayde Summers waxy potatoes are yellow or white with smooth skin, starchy are the brown russet potatoes with rough skin.
Doesn't work for all varieties, they come in alot of different colors.
Where i live (Germany) it's written on the sacks/bags.

I was going to ask the same question. When I go to the supermarket the options are usually washed or brushed and they rarely say what variety the potato is.
Kalliste I'm pretty sure the yellow skinned potatoes (Yukons, russets) have more starch than the red skinned ones.
