You can't go wrong with a good old torta de jamon with all the trimmings. Tortas de chorizo y huevo con frijoles. No worries if it gets cold still.good at room temp. 🌻

Interesting idea with the "sauce". We'll give that a try. Just a note about all eggs, they should be cooked on a low heat to avoid any kind of browning. No matter how they are cooked, fried eggs sunny side up, scrambled, over easy etc. always at a temp that will not brown them. Not all folks are the same but in general, cooked eggs should be brown free, delicate and fluffy. They really have a more in depth flavor. I know some folks like them browned...everyone is different but for a base method, low heat will yield more flavor and delicate eggs. Try it and see. The onions can be cooked first then lower the heat for the eggs stage. No pun intended. Thanks for the recipe C.
