    Here's a tip: If you have an oven with exposed heating elements on the bottom, don't throw water on them (it's bad for it), instead, put a broiler pan on the rack under the pizza stone and put hot water in it just before putting the pizza dough in. This works great for nice hearty bread as well.

    Donal, mate, I know you need to taste your food on cooking shows to give a sense of credibility, but...THIS PIZZA CAME STRAIGHT OUT OF THE OVEN :D I think everyone here would have been cool with you waiting a few seconds or cutting the scene to when the pizza is not a melting cheese vulcano.
    Anyway, looks delicious!

    I have no pizza stone, my oven goes until 250 degrees and I don't precook the dough.
    After preheating, I just put the pizza on the lowest part of the oven (where the heat is generated) and also I turn on the heat below and turn off the grill above. I have wonderful results.

    My dough always become too wet/sticky whenever i make one. I think there's something wrong with my measuring cup. This video is too funny lol

      It can also depend on your flour or how humid the air is. You could try only using part of the water and then adding more and more while kneading until you reach a good consistency :)

      +SprinkleofWilly same, but last night I decided I would rather have a slightly dry dough that I can deal with. So, I left out the olive oil and did 1.3 cups of water to 4 cups of flour, and it turned out perfect. Keep trying!

    a common thing people will do if they don't have a pizza stone is get a large, non-stick OVEN SAFE pan, put it on a high heat on the stove, then put the dough on there and top the pizza. once you've got your toppings on and you're pizza's ready to be cooked, put it in the oven while still in the frying pan.
    SERIOUSLY. IF YOUR PAN HAS A PLASTIC HANDLE, DO NOT DO THIS.

    Donal, when you stretch the dough, you can do it more easily and efficient by pressing it with your fist in the center of the dough, then using the tip of your fingers to stretch it a bit and then you hold it by the borders and let the weight of the dough do the final stretching for you. Then, use your knuckles to define the crust. No need for rolling pins. That way, and if you did it correctly, you end up with better shaped pizza. Finally, no need to pre-cook the dough before you add the toppings. Just put a little bit of olive oil, spread a very thin layer of sauce and tear up a little bit of mozzarella cheese, a little bit more olive oil, add the basil, salt and pepper and into the oven! Do not overdo the topping. Too much and you DO end up with soggy dough. I hope you try this and see the difference. Sorry for my broken English. Great channel! Keep it up.

    You should use the pizza peel to put the dough onto the stone in the oven. You'll retain a lot more heat like that.

    My tip would be to get some fire bricks to put on a rack level just above the pizza stone. It works amazingly. Preheat the oven at 500 for an hour, and then after popping the pizza in (on the pizza stone just below the bricks), 10 minutes or less later, as close to Napoli style pizza as a conventional home oven can manage.

      +Donal Skehan oh my, I fan-girled a little when I saw your reply. Anyway, I live in Brunei, and we are not well-equipped in the Western baking/cooking utensils area. Most of the time, I'd have to go on ebay to find them, or look for them outside the country. My heart is set on finding the pizza stone! 😃

    Tips for homecooks:
    When mixing the yeast with sugar and water, the water MUST be below 120 degrees F. Yeast flourishes between 80-110F. Once the yeast gets introduced to 120F water, it begins to die. Dead yeast does not allow the dough to rise and become airy.
    If you keep the bottom of your hand on the dough and stretch the dough forward with your other hand, you're not kneading the dough properly. The dough should not begin to tear while kneading. From experience, pressing the dough into itself and then pressing forward in one motion allows for the gluten to develop, and allows for the elasticity that Don talks about
    Let the dough rest for +20-30 minutes. Resting allows the gluten to subside, maintaining the gluten content, but reduces the elasticity of the dough as it becomes "cold". If you overwork the dough after it has rested, the gluten gets a chance to reactivate, and it becomes much harder to flatten the dough to shape
