- This is a super easy cheesy breakfast quesadilla for any lazy morning! For what is basically an Irish breakfast inside a Mexican quesadilla, it really delivers on flavor & comfort! ENJOY!
Ingredients:
4 flour tortillas
2 tbsp olive oil
Bacon
25g butter
4 eggs. beaten
100g vintage cheddar, grated
4 spring onions, thinly sliced
Small handful of fresh coriander leaves
Sea salt and freshly ground black pepper

hey friend, I make those same quesadillas in Mexico and a lot of people too, the difference is that we make the sauce with habanero peppers that is like a thousand times more spicy than yours and we use corn tortillas. but yours looks delicious and of course I will. (only with habanera sauce)

Can I make a request? Can you post recipes every so often, that are spicy but use little to no carbs? My adopted sister is diabetic, and I cook for her from time to time, so any spicy dishes like I request would be greatly appreciated! I use unprocessed honey for sweetener, or cook down, to release natural sugars. I never use processed sugar.
Just so you know... She can handle spicy Thai dishes, so I doubt you would make it too hot! 😃
Before moving to the US, I never had tacos. Now that I have tried, I love them! 🐭

Breakfast looks so good you could eat it anytime.
You can damp the tortillas with water and heat them in the pan and they will get super moist like when they were cooked at first.

We loved this help this morning it wasn’t exactly this recipe I didn’t have a flower tortilla so I used to corn tortillas I did bacon and wonderful scrambled eggs with a little bit of dairy cream fresh in the eggs before I beat them up little sliced red onion anyway the whole thing was just so and sharp cheddar cheese I did use that shredded it brown beautifully it was wonderful it was just wonderful what a great little treat our use some salsa in mine Rickbayis jarred “drunken’ sauce. Wonderful and very customisable.

Donal, how are you pouring hot bacon fat into a jar straight out of the fridge and not cracking it? I did it a couple of years ago and the jar just shattered. Also, how long does it keep for? Do you have to strain off all the little bits or just lob it in there?

Also love how you save the bacongrease! I wish more yt chefs would give tips like that on how and when to safe certain scraps and bits of food for later... and then do recipes with those saved products!
I love to be more concious about not wasting food and have my fridge and freezer stuffed with things ready to go. Like veggie scraps for stocks. And the other day I learned that you can perfectly make a big batch of soup and freeze individual portions in freezerbags 👌

Scrambled eggs should have a lot more butter. That many eggs, 3tbsp. 2 in the beginning, finish with 1 more. With the bacon, a little water in the pan will keep it from burning in the oven.

I just noticed the red sauce you start asembling with at 6:19 in the video, isnt in the description below. I figured it was maybe salsa, but I went to your website and in that description theres a whole lot more to put on, that we didnt see in the video like chorizo and some other stuff, but what comes closest to the red sauce was jalapeno relish, so is that it? 🙈
