About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on CZcams.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Chef Hiro, this is the best looking crab gratin l have ever seen, and l grew up catching blue crabs and cooking them myself. And l learned to make gratin at a young age. And you have still taught me a lot here. The only thing l would suggest if you ever make this again is to add chopped scallions, thinly sliced mushrooms, and sliced water chestnuts to the mixture before you bake it. I know that may sound unorthodox, but l have found those three things to compliment the dish very well. But your basic recipe is the best l have ever seen. Thank you so much for this.
the best you've ever seen.. he literally picked the crab.. made a roux.. put like 2 pinches of cheddar cheese and salt and pepper.. that honestly looked like one of the most tasteless gratins i have ever seen..
@billytimmons I probably would add a bit more cheese and seasoning myself, but the whole point of the dish is that when you have great crab, you let it shine through and don't overcomplicate the flavor. I think Hiro's preparation looks nearly perfect.

U was born & raised in Annapolis, MD...we grew up catching crabs with my Dad on a crab line...we steam crabs in Maryland, where some places like Louisiana boil them. We just use crab mallets (wood hammers) & crab crackers to crack the claws...the worst thing you can do with a crab, when you are preparing a dish with it, is to find any shell pieces in it. That's why we never use knives to crack the claws...it tends to break the shell into tiny pieces. When you use the cracker or mallet, it just tends to crack the shell, but not into tiny pieces, so there is no risk of running into a piece of shell, say in a crab cake, etc.
