About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on CZcams.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. I used to work at a restaurant that would cut hundreds of live lobsters in half every night. We were required to remove the claw bands before we cut them in half so that they were allowed to defend themselves.
More than a few times I got pinched by the crusher claw, not because I wasn’t fast enough during the cutting, but because the two halves of the newly bisected lobster will fight you independently from each other for about 30 seconds after being chopped in half.
Sometimes one of the halves gets a sneak attack in while you are cleaning out the guts or chopping another lobster close by.
P.s. if your going to steam that lobster carapace, make sure to remove the stomach right behind its mouth, otherwise it will taste gross.

@@lukebrennan4411 It wasn’t legally required and you wouldn’t get punished if you didn’t do it. I’m not even sure when the practice started, or if we were the only place that did things like that. It was just out of respect for the lobster, and for our own pride. In that moment the lobster is empowered to defend its life. It seems wrong and cowardly to chop in half a live animal while its reaching for your hands with its claws bound. Especially when the worst thing it could to is break a finger

I’m in Maine and my uncle who is a lobster fisherman lost the tip of his pinky to one because it got crushed so badly the doctors had to amputate to the first knuckle. It's an amazing coincidence that this video came up in my recommendations from CZcams, because I just watched the videos from your collaboration with Taku. I was inspired to try to make a California Roll on Saturday. The seafood place I go to had the little 1.25-1.5lb lobsters on special, was going to do Dungeness crabs but was too expensive, so I made lobster rolls. I watched the videos on making suchi rice and vinegar and suchi rolls and I honestly don't know if I got it right or not, but it was FANTASTIC. Big thanks to you Hirosan and Taku for opening my eyes to this style of cooking.
Now this Lobster Roll you just made was FREEKING EPIC!!!! I still can't believe that you made one this HUGE. That trick to GLUE the nori together was pretty clever I must say. Another funny coincidence is that I use the same wasabi as you did in the video, very tasty but packs a whollop, I use it sparingly, very hot, LOL 😂😂
