Steamed Rice Cakes

  • This is my recipe on how to make steam rice cakes. I have been using this recipe for over 12 years and will never go back to using store bought premade flour. This recipe makes light and fluffy steam rice cakes. For recipe see below and for detail recipe instructions view the video.
    RECIPE
    Step 1: Mix the following
    1 bag rice flour (16 oz)
    1 bag tapioca starch (14 oz)
    3 cups sugars (I like it sweet)
    1 can coconut cream (400 ml) or coconut milk
    1 packet yeast Levure (or 1 packet fleishmann rapid rise yeast)
    1 packet baking powder (or 1 TB baking powder)
    3 cups room temp water
    Step 2: Tangzhong method: Mix the following and cook over medium heat till thicken (this helps with soft and fluffiness if anyone is wondering the purpose of this step)
    1 cup rice flour
    4 cups room temp water
    Step 3: Mix step 2 with step 1, cover and let rise (1 hour)
    Step 4: Steam 6-8 minutes depending on your mold size or longer if steaming in large pan

    I tried 3 to 4 different recipes and this one is by far the best. I left the cooked ones overnight on the kitchen counter at room temp and it's still good to eat the day after. Thank you!

    I have also recipes similar to your steam rice cake. We called it "puto" one is made with flour and the other one is made with rice flour using tangzhong. Yours looks more great using rice flour, tapioca starch and tangzhong, it's interesting! I ♥️ it and I'll try to make it for my grandson birthday next week.     Can you please link where you got your double boiler? I notice the small clear cups you place in the boiler where did you get those molds?

    Thank you for the recipe. I'm going to try it. Looks like it makes a lot of those mini cakes! Do you need to store them in the refrigerator if you can't eat them all that day? Will they turn hard the next day? Also, did you have to oil the molds?

      Yes anything uneaten in 1 day should be stored in a close container. Microwave for 8-10 seconds as they will slightly harden in the refrigerator. No need to oil the mold because the coconut milk contains oil.

    So the first time I made it, it turned out great. I did the full recipe. This time around, I decided to cut the recipe in half cause I wanted to make a smaller batch. After waiting for a whole hour it didn't rise. It's still liquidity. I don't know what to do now. 😅

      I don’t recommend cutting this recipe in half, you need the yeast amount for the batter to rise.

    is this cooked on med? high? low? and what kind of cup do you use?

      High, but if you want to avoid the top of the cakes creating cracks cook on medium. Adjust time base on cup sizes. Cups are shown in the video, silicone molds or glass cups.

      Hi, it could be you over cooked the rice cakes or too much humidity from the lid dropped on the cake.

      Hi, these were purchase from a local Hmong store (Super X) in Sacramento. It is butterfly brand. Hopefully this helps.

    Mine came out perfect! Except my steamer is smaller so it ended up being tedious work for me, from start to finish like some four hours. 🙃

      Oh wow that’s a long time. If you like you can steam as one big loaf in a pan then cut after cool. Timing varies but try 15-25 minutes.

      Hi, texture should be soft and spongy. Not chewy like coconut layer cake, if chewy you may have overcooked it.

    Hello do you know how many days prior to a party can you make these? I want to make it the day of the party but ill be busy so will it be okay to make it the day before?

      Day before is fine. Keep in air tight container or close well with foil.

    We made a batch with the wrong yeast: active dry instead of rapid rise. Do you think it would be salvageable?

      It’s possible, active dry yeast is unstable so I don’t use it in any of my cooking/baking.

    As someone allergic to coconut, what would you suggest as a replacement for the coconut cream/milk? Condensed cream/milk?

      You can replace with milk but the taste will not be exactly the same if not using coconut milk/cream.

      Try instant heat and adjust your temperature and little lower.

      These are from the Asian store in Sacramento. You can use any instant yeast and double acting baking powder.

    How many packs do I use? Or measure and mix everything right in a bigger bowl, if I'm doing for big parties or funeral? For both steps and how long should I wait after everything is mix? Still an hour?

      Yes best to wait 1 hour for the batter to rise for best results. For bigger parties you have to make several batches. 2 batches (double the recipe) makes 1 large foil tray. Let me know if you have further questions.

      You can use water to replace, I have not tried yet since I like coconut but someone let me know they did it and it taste fine with same texture. You may need 1/4 less if using water but I’m not sure since I have not tried. Sorry hope this helps. Let me know how it turns out for you.

      Active dry needs to be (proof) dissolve in warm water before using. Rapid rise or instant does not. Your bread may rise quicker using rapid rise/instant yeast vs. active.

      If refrigerated it’s good for 5 days in closed container, just microwave prior to eating. If not refrigerated it’s good for 1 day at room temp/cooler temp.

    Am I doing something wrong? Mine don't look like yours. It looks like there is more Topeka (more smoth and jelly not airy with air pokets) then the rice flour even though I bought the same brand if thing you used. I followed everything you did. I need help. 😫

      Hi, I think you may have overcooked the rice cakes. Try medium high temp and 6-8 minutes. Try different batch with different times to see.

      Hi, baking powder is needed for this recipe. If you do try without let me know outcome. It may still work using just the yeast.

      Preparing a smaller portion can be a bit challenging since the measurements are there for you just to mix it already, but you can simply split the ingredients in half for small portion.

    Why my cake deflated when cool down?

      Hi, it could be a few reasons such as yeast is not good, steamed too long, or batter did not sit long enough prior to steaming.

      I’ve never froze mines but these are best served fresh or eaten within 3-5 days. I usually refrigerate mines and microwave for a few seconds to warm up.

      It’s best not to as the yeast gets quite strong in smell.

      I used the silicone to steam, and some of the rice cakes shrunk down after removed from the steamer. Why is it doing that? Is the heat too high or fast? Did it not cook well?

    I try your recipe however when i open the lid the cakes are fluffy and big then eventually deflated. What should i do to keep the shape .

      Check to make sure your yeast is still active before using. Also sometimes if the heat is too strong that can happen, try steaming at medium heat to see if that helps.

      @@ZoeyandVFam It deflated. Couldn't be the yeast, bc it's new. We put a towel so the water wouldn't drip. Lot of cleaning up. We might try again in the summer.
      We tried your jello with the flavored colors mix packs and it works well too. Just add less water and an extra pack of gelatin. I have my 10yo try different stuff to keep her busy.

    I don’t know why mine doesn’t turn out fluffy 🥹 before nothing wrong but I don’t know what happened. I still do the same technique. But when I opened the lid it still flat🥲

      Could be a few reasons such as heat/temp to high or yeast that didn’t rise well or batter too runny.
