The OG medieval three-field system would be Rye(or Emmer)/Flax/Fallow rotation on 3 fields, so 1 is always fallow (and animals grazed on it).. So fallow regenerates fertility for both, then Rye brings down its own fertility, then Flax does the same for its own, then Fallow regenerates. At least that is how it should be and considering Developers attachment to history - this should be the optimal setup too.
I learned a bunch more about farming last night so I'm actually going to end up already updating this and release a new guide with the game release on the 26th!

I tried doing that exact same thing, but my guys will never harvest the field. As soon as October comes around, they start planting my field instead of harvesting whatâs already grown. Am I missing something?

Nah, farming is just insanely buggy currently. Unless your are forcing early harvest and manually crop rotating it's going to bug out
Do the crop types affect each other, or only fallow does that?
Only fallow allows for replenishment of fertility
i cant figure out if i have enough farms or too many. how do i know if my farms are inefficient due to workers?
Farms are just very very inefficient and the dev is trying to balance them at some point. Importing food and veggies/apple gardens in backyards are the go to.

can this game be played more so in chill mode and not worry much kinda like anno you can adjust your game to be pretty much a city builder/beuty builder, or is this more hardcore?
There are scenarios and options to make it more peaceful city builder
