  • Plant Based Jamaican Red Peas Soup
    3 cups cooked kidney beans
    7-8 cups water
    3 medium carrots diced
    3 large white potatoes
    3 garlic cloves
    5-7 pimento berries
    1 ½ stock cube
    4-5 sprig thyme
    1 tsp cayenne
    2 tsp salt or to taste
    *Cook for 25 minutes then add dumplings and ½ cup coconut milk
    Dumplings:
    1 cup oat flour
    1/3 cup cornmeal
    ¼ cup cassava flour
    ½ cup water + 1 tbsp if the dough is too dry
    *After adding dumplings, cook for 15-20 minutes.

    Did you use tin red peas?

      No, I used fresh but you could use tin. I think the main difference is that the colour might not be as vibrant.

      @@zukiebabes3285 total cooking time 40 minutes.
      25 minutes for the veg and then 15 minutes after adding the dumplings and coconut milk. Everything will be in the description box.
