Red Peas Soup with Pig's Tail

INGREDIENTS:
- 1 - 2 lbs Salted meat, trimmed of excess fat and rinsed with Lime, vinegar and water
- Enough water to cover the meat and soak overnight
- Fresh water for boiling the peas and pork
- 3 litres or more water to cook beans and pork together
2 1/2 - 3 cups DRY DARK red kidney beans, rinsed thoroughly (more peas = richer colour)
6 or more allspice berries (pimento)
3 garlic cloves, diced
1/4 cup carrot, diced
1 - 1 1/2 cups diced pumpkin
1 small sweet potato peeled, cubed
Yellow yam, peeled and cubed
Dumplings

1 carrot, sliced
1/2 a can Coconut milk
1 or 2 whole Scotch bonnet
8+ Allspice berries (pimento seeds)
3 stalks Scallion
FRESH Thyme
Grace brand Chicken, beef or pumpkin Noodle soup seasoning to taste (I sift out the noodles before using the seasoning)
1 chicken/vegetable boullion cube

My Mom used to make this soup. I'm going to give it a try but I won't put the dumplings because of diabetes. I'll switch out with slice of green banana. Lots of pepper and thyme :)
