Do you use mandarin peels in your cooking?
You think your dad can show us how he dries his mandarin peels ? Curious if its different from the other ways I have seen.

there really aren't that many ways to dry mandarin peels.
Most Chinese grannies just do it under the sun for a month. But personally i use a dehydrator because long exposure to sunlight has a habit of destroying some of the fragrant volatile chemicals i want from peels. I make orange liqueur from both fresh and dry peels so i know.

ever since I saw in a previous video you drying and saving them, I've done the same. The smell when I open the container is wonderful.

I've tried dried mandarin peel in Pu-erh tea actually (the black tea was stored in a whole dried peel that had a lid) and it smelled amazing! I'm pretty sure you can use it anywhere where you would normally use citrus zest or citrus peel.

@@coolenaam I've seen people use citrus peel to add fragrance to chicken/ turkey brine. You can also add citrus peel on cocktails, grind up the peel and mix it with sugar or salt (think of it like lemon pepper seasoning), or add it to sauces (like orange chicken), you can even try adding it to cooking fruit preserves/ jams. I like to use citrus zest/peel when I want to balance foods with lots of fat or sugar so it doesn't taste overly rich. It doesn't even have to be dried mandarin peel! You can start with just using a zester or peeler on any citrus you have on hand.

Peel your mandarin spread the peeled on a large tray, and let the sun do the work. Turn the peel over once a day for 5 days until it is dry.

Well you just let the sun do the work. Spread the fresh peel on the tray, and let it bash under the sun. Turn it over once a day for 5 days until it is dry.
@@andromedamessier3176 You don't wanna protect all the aromatic compounds against the suns UV light and oxidation? Unless that changes the compounds in a favorable way?
