    I'm a chef and I also work at a garlic farm in CT. This is what I know: the white soft neck matures faster. Popular in commercial growing. Much of it comes from East Asia and is bleached. this type is LESS strong. However California has a steady production of soft neck. Hard neck can be white or purple, I've grown both types. Both hard and soft neck can vary in flavor, but the differences after cooking are slight. If you are an advanced chef, you can play with cooking time and the addition of small amounts of raw garlic to achieve crazy flavors, intensity, and spiciness. Sidenote, fresh, straight from the ground, garlic is less strong. Drying/curing concentrates flavors. If your garlic is very difficult to peel, leave it out on the counter, it will dry more, and separate from the skin slightly. Just chiming in and providing detail.     I like the Purple Garlic. I've also grown garlic myself and picked some that were one large bulb. They were amazingly aromatic and full of flavour and juice.

    I prefer the purple ones but any garlic that you can get locally especially at farmers markets, DO IT! It changed my life. These types garlic doesn't doesn't leave that garlicky smell on your hands.
    Please stay away from China produced garlic, you can tell by the missing roots and their super whiteness. They bleach them and they are not grown with the best environment and may contain a lot of pesticides. Saw a video years back on garlic from China.

    Great Short & true. If ppl continue to buy garlic in store, make sure it has those roots coming from bottom & purplish streaks. Then you know it's real. If it's pure white, it's just not what you should be putting in your body.

    PURPLE GARLIC IS FROM ARGENTINA.
    TAIPEI CITY MARKET HAVE LOTS AND CHEAP.
    TAIWAN LOCAL GARLIC IS WHITE .
    BUT SMALL CLOVE AND MORE FLAVOURFUL STICKY AND SPICY IN FLAVOUR TASTY AND DELICIOUS.

    Look out for the source of your garlic. Avoid bleached garlic that’s been produced by workers under poor circumstances. Try to buy locally produced garlic if possible.

    I always get my garlic with the roots still attached. Garlic with the roots cut off and bleached can be full of pesticides.

    But, are their health benefits the same? I like to cook whole cloves for the last 7 min before my chicken is done. They're like little potatoes.

      No smell is about the same, White just tastes stronger but harsher

    when garlic sit too long they sprout, is the garlic still eatible ?

      Yes, garlic is still fine to use even after it sprouts. If it's been sprouting a long time, only the sprout will be juicy and fresh-tasting. (It's trying to grow into a new bulb.)The outside will eventually get porous, like damp cardboard, not flavorful. It's tedious to have to peel through the old garlic to get to the sprouts, so, if you have a choice, just get some fresher garlic.
