Why is every BA chef so freaking likable. Sure the videos are super informative and teach you how to cook somewhat complicated stuff, but at least 50% of the fun are the hosts
BA is basically the polar opposite of Eater.

It's why my favorite food personality has long been Alton Brown. It's not just a straight recipe, it's cooking, educational and fun all at the same time. All the people at BA really bring that same sense of enthusiasm.
SpikeReynolds They don't put the unlikable ones on CZcams. I'm joking, it seems like the whole staff is awesome.
the recent trend of not being afraid of showing outtakes and talking about mess ups makes me feel better about how much I mess up in the kitchen haha

at first I thought the gourmet series was kinda dumb... like why would I want to learn something that is so industrialized made but through watching Claire adjusts, I just learn so much of how to hypothesize about what went wrong and find ways to adjust.
No one was ever really afraid to show their mistakes. But many of these shows are ran by people used to TV snd they're just wasn't time to show mistakes. As younger people without tv experience started showing mistakes, the experienced people soon followed.
I love how she brought up the cooking wine thing, in the wise words of Chef John: if a recipe calls for a cup of wine, you're stuck with the rest of the bottle at dinner, so get something drinkable

It just makes the videos longer hence wastes time. Some people don’t watch for entertainment. If it were taken out, most people would be none the wiser.

@@dm5331 The mistake of putting butter too early? That's not a common mistake. And besides, she redid the take. They could have left it out making the video shorter, or they could have put more detail on something that was right. In the world of CZcams, you don't have long, so give people more value for their time.
@@elephantgrass631 seeing someone who is an expert make mistakes is a very empowering thing to see, it helps people who are learning understand that they can mess up the thing they are cooking and still rescue the meal. There are plenty of other cooks on CZcams doing things perfectly in 5 minutes or less!
@@MrAlexanderGoff You're right, you've changed my mind. We should never edit any video footage ever. Show all the mistakes so we all learn what not to do. I don't mine watching 7 hour cooking videos on how to make pasta because no one wants to edit in the name of sharing mistakes.

I would have just added the wine after the mistake with the butter... it really doesn't make much of a difference (although I could well be wrong... it's been known to happen). But I can understand her dumping it... after all, she's demoing a recipe and how it should be prepared. Julia Child could work with happy accidents, but ther rest of us, meh.

HISIAM888RUHIS888 Broth and Stock are good alternatives but Water is more natural and doesn’t add unnecessary flavors, the point of this dish was that the Butter and Garlic are the stars of the show, so adding vegetable stock or something like that would contrast the flavor
I love Carla! If I had to choose one person from the kitchen who I would love to learn from irl it would be her.
Acacia I like her and Brad a lot but she was a little scary with the Wayans brother 😀, but hard to judge from one edited video.
To be honest that just kinda makes me like her more.
I think she's the best instructor (aside from the Wayans one). I'd like to eat Brad's food (I love ferments). I would like to eat lunch with Claire and ask Chris profound questions about the art and science of cooking. I would like to tell Andy to stop sticking his butt in the camera!! Lol. He's always bending over on the opposite counter with his butt facing the camera.

scampi is actually the name of the specific type of crustacean, which is similar to but not the same as shrimp. it's the italian name, whereas the latin would be Nephrops Norvegicus. fun fact: scampi are called that because they have a tendency to escape (which is understandable on their part tbh). from the italian "scappare" (to escape) and more specifically the venetian equivalent "scampar".

Angel hair is my favorite pasta! The thinner the better. Maybe I should try eating hair, brb. (what don't you like about it?)
A thick, creamy carbonara with angel hair pasta is the flippin' best. The huge amount of surface area makes it soak up so much sauce and turns the dish into a lovely flaverbomb of umami.
Lindsay Daly angel hair is terrible! I cooked it once (and yes I cooked it right) and it was like eating stringy mush.

So, it could be called "shrimp shrimp" or "scampi scampi" I don't care - I am here for the sauce! (thanks for the water tip! I am in my 70s and have been cooking wrong all of my life!)
Scampi is a larger shrimpish beastie, sort of inbetween a shrimp and a lobster, and is found in the Adriatic. So, she's kind of right when she says it's "in the style of Scampi".
I've made this twice now and it was fantastic both times. Carla, you rock!

Scampi is a species of lobster also known as langoustine. In the UK it is traditionally breaded and deep-fried then served with tartar sauce, chips (chunky fries) and lemon. Scampi in the US uses this species too but is served in garlic butter and french wine; Shrimp Scampi uses shrimp instead of Scampi/Langoustine.

Langoustine shrimp. Kinda like "chai tea", meaning "tea tea"
Nice tip about marinating he shrimp in grated garlic, never heard of that before and I love scampi, make it for myself from time to time.

I like angel hair pasta, I can't eat the thicker stuff it's just too much to chew more that a few strands at a time...even regular spaghetti gives me trouble...and linguine forget it.
Mark Gannett the chew is the whole point of pasta isn’t it? Angel hair is a non event, and always gets overlooked, and overlooked pasta is disgusting
Angelhair and pappardelle are my two fave pastas. (spaghettini in a pinch)
I think I'd actually be able to make this! I'm usually too intimidated to try most recipes on YT, but this looks awesome and it helps to know if I do something wrong it can be fixed. I'm always afraid of messing something up and ruining a dish 😅 Thank you guys, y'all are out here expanding horizons!
