- We challenged resident Bon Appétit supertaster Chris Morocco to recreate a General Tso’s chicken recipe from 'The Woks of Life' in the Bon Appétit Test Kitchen. The catch? He’s doing it blindfolded with with only his other senses to guide him.

When will Chris go shopping again? That was part of the fun!
I loved it and I think helped him to see alternatives on the shelves next to what he was planning to buy.
Agreed.
Agree! Maybe he didn't like it?
They seem to have stopped during lockdowns for understandable reasons, guess they realized it was too inefficient and took too long? Or Chris didn't like doing it, but that seems less likely.
Amen
When she knew he didn't listen about the double fry I laughed soooo hard! The looks she gave the camera was hilarious! lolol
He never learns. She knows her cultures food better than he does. He should always listen. But he chooses to think he knows better. Why is that? 😂
@@KimbaLoveAdams Because he can still be an arrogant jerk????
He heard, he listened, and then he ignored.
His response, "What I assumed you might have meant..." and her look, like a teacher that's not buying the student's excuse for doing the assignment wrong... was so funny.
It's so like Chris to be literally told what to do and still think his way is better. LOL
I don't think thats what happened. Sounds more like a misunderstanding, he said it himself he thought the wok was the second fry
That was no misunderstanding. He actively ignored a clue that was generously given to him
@@koolguy728no, that’s literally just how Chris is lol. He does it all the time. He doesn’t mean any harm by it, he just has his own instinct and thoughts on how to do things. But it’s a common occurrence. I would say it’s more rare for him to take and use advice, than it is to take advice just to not use said advice.
I mean, your way can be better if that's the way you prefer a dish.
@@freighter1097 But that's not the concept of recreating a dish exactly (which is what the point of this series is...???) like...LMAO
We will need a full episode of Chris learning about soy sauce. It IS useable content!
Agreed. I have 7 types of Soy Sauce in my pantry (most of them are admittedly Japanese variants not Chinese) plus 2 Tamari styles and other Asian sauces.
I really need a supplimental 5min "Chris tastes Soy" episode.
I very much agree. I love Soy sauce. I love Tamari....
But then I tried La Choy Soy Sauce. It was awful.
world of Soy Sauce is on the insane side especially with how it tastes and how you use it. But the manufactured Soy Sauce that cheating the process has me really worried
@@Arch3r666 your note doesn't make any sense to me.
The thing is, Chris had 7-10 different soy sauces presented to him. This whole series is based on him being a "super taster" and having the most delecate taste buds on the planet (honestly, it's why I hate all. His recipes... Bc they usually turn out so bland).... But I'd love to put his super tastely bids to the test and have him blind evaluate 10-200 different soy sauces!
Oh dang!!! I binged like, every episode of reverse engineering! To see a brand new episode is AMAZING! Please do this more!
Being told it's a double fry and then dismissing it immediately after, then claiming "It's fussy" when confronted. Why ??? 😂
I love these videos but Chris can be so needlessly pedantic sometimes lol
I guess he meant that it's too much effort lol
he did the same thing with the compost cookie episode...well he wasn't given that hint but he mentioned it himself and then dismissed it b/c it was too much effort. That kind of seems counter to his otherwise precise and fastidious nature
You can tell Chris doesnt make a lot of Chinese food because Velveting the meat is a very common technique for restaurant Chinese Food.
Agree, even my mother who rarely cooks and didn't even learn until her late 20s taught me about velveting meats for Chinese dishes
“A little bit of retronasal soy” 😂
Him thinking the twice fry is an exclusively Korean thing is mind boggling to me
Ugh FINALLY! We need a series of JUST this!! There’s not enough content, I’ve watched it all and wait and wait and wait for what seems like FOREVER. 😢
I love that Chris realised he made a non Newtonian fluid.
I do want to see Chris be able to do try as much as he can until he is very happy with the end result.
I'm surprised he was resistant to the second fry. It's the key.
best series on youtube - hands down
chris recreating those dishes is always 10/10 entertainment and makes my whole day
The disregard, followed by petulant sounding 'Totally, Thanks Anna!' Lol this guy is funny...He gives male 'corporate Erin' universe vibes
Any content with Chris Morrocco is usable content! Please keep doing the bloopers!!!
The pure amount of ingredients for Chris to identify here is staggering.
It's actually a pretty standard stir fry with a few minor tweaks to get more in the spicy, sweet direction. I think he just doesn't know much about Chinese techniques and common ingredients.
Have to agree. I'd have done worse but I'd have gotten almost all of the ingredients just by expectation of what is typical. @@mmarksz86
I miss when recipes had a specific chef attached. A lot of times the ingredients would reflect that chef’s POV, it was a lot more fun than making a more general version of a type of dish.
Okay, now I wanna see this guy do a peanutbutter and jelly sandwich, just to see what he says.
That would be a hilarious April Fools - maybe cut it into bite sized pieces and stack them to throw him off the scent.
He notoriously hates peanut butter so he'd probably say a bunch of stuff about that.
Disappointed in Chris when he equated helpful advice to "lets just double fry everything now". Extremely dismissive and felt a bit defensive that he could be wrong about something.
Not surprising that he didn't catch the hint Hana gave him, and the way he tried to talk his way out of it by way of the cooking in the wok being the second fry..! So pompous. SO typical!
I cracked up at the new credits during the outro having Morocco labeled simply as 'Talent'. Pretty funny!! I bet he loves it.
"Come here and teach me something"
A few minutes later
"Yeah no, I decided I'm unteachable"
Tastes brown sugar, uses white again!
I can't afford to watch this channel when Im hungry.
So happy they’re bringing this series back! I missed it
I’m really annoyed with his attitude about the double fry. First, he asked the token Asian for help then proceeded to ignore it. And then determines it’s a fussy step. Chinese cooks have developed this technique for centuries and there’s a reason those techniques are still used today.
Was looking for this comment. "That's so fussy to me" hello??? Rude 😭
And then he says next time he will double fry cornflakes. So childish. Is it so hard to accept that you made a mistake and learned something?
He made an objectively worse dish as a result all because he "thought he knew better" than generations of talented Chinese chefs. He consistently whines about techniques that are even moderately involved, and I think he makes worse food because of it.
@@mmarksz86 most recipes online don't call for a double fry. don't act like you are an expert or be offended on someone else's behalf.
Ah yes 'umami' with the hand gestures. Very legit
Yay! Welcome back! I’ve missed this show so much!
Chris should be allowed to voice memo his gut reactions, to listen to while picking his first ingredient list.
You guys need to do an episode where you have him taste one of his own dishes and see if he can recreate it
I come back to this channel for test kitchen videos. Keep em up
I’m glad to hear people pronounce it the same as me because I’ve had people not know what I was saying because they’ve only heard it pronounced another way
Thank goodness these are back!!!! Missed Reverse Engineering!!!
LMFAOOOO SHE WAS SO MAD AT THE END LOL HER FACIAL EXPRESSIONS LOLLLL
10:52 Chris makes oobleck by accident, lol
I'm baffled that Chris asks for a clue/hint, literally gets told what to do and then decides not to do it....who does that? I'm always so on the fence on how I feel about him, that streak of arrogance oy
Chris is truly a cooking savant - even when he doesn't get it 100% I am always so impressed by him just identifying so many major ingredients. Maybe some day he can come visit us at our test mill and bakery in Lynn, MA and do a taste test with our stone-milled whole wheat organic bread versus the industrial roller milled competitor 👀
LOVE this show, i’ve been watching since the start🌻👹
He should do an episode where he has to figure out a recipe he made, and see if he figures it out.
it's interesting how Chris is always so hard and demanding on himself, yet he tried to get away with totally ignoring Hanah's literally telling him to double fry the chicken!
Speaking of General Tso's Chicken let me put ya'll on:
Jane G's Dim Sum House in University City West Philadelphia makes quite literally the best General Tso's Chicken you will ever have. It's a tad bit expensive but it's so unique and delicious it's worth every penny.
My favourite segment on BA! Wish they did more of these!!!
Aerodynamically the bumblebee shouldn't be able to fly, but the bumblebee doesn't know that so it goes on flying anyway.
“Sometimes it’s not what you’re friend says, it’s just the comforting sound of their laughter” is my new mantra.
Yessssss I screamed when i saw a new episode! 💕
I miss when Chris would go shopping
All seasons are beautiful for the person who carries happiness within.
I have missed these so much
Retro Nasal Soy - should be the name of his cook book
This dish is just as complex as when Chris tried to recreat Aaron Sanchez's Chili Rellenos.
I thought they were gonna fight BC HAHAHAHA “at the end i gave you the highest score..ugh” LOL
Finally!!!
BA really isn't beating the "not listening to PoC staff" allegations, huh?
Thanks for this... YUM!
I can't believe Chris disregarded Hannah's advice, how arrogant can you be? I think he needs to sit down with some Made with Lau videos and learn some basic Chinese cooking techniques.
I completely agree!
Double fry it dude! She couldn't have given a more clear clue. Mansplaining is too real. We can do better boys.
Yayyyy!!! Ba back!!
She finally understood that grief was her love with no place for it to go.
It's been SO LONG since we've had a test kitchen located video!!!
Uncle Roger we need you!
A video just on soy sauce might be something to consider.
Chris got robbed on the appearance score first round. That was darned near 100%. High 90s at least.
Fun video! I wish there were links to the recipes (especially the one he was comparing against) so I could try it out!
"Bowl of Corn Flakes" Chris cracking me up today. xD
He quietly entered the museum as the super bowl started.
Such a genius. Most impressive
I would like to see him try Navajo or "Indian" tacos sometime
We missed these videos 😮
haha I do love very typical Chris not listening to instructions and going with his way. But yeah it seems like this is not Chris' specialty and if Chris wants I'd love to watch him try recreating more Chinese food to see if there's a learning curve :D
I'm going to say this again: Y'ALL DON'T MAKE THESE ENOUGH!
Normally a huge fan of these…. The huge failure here is technique…. Basic fundamentals of Chinese cooking…. So much to learn.
I'm on Hana's team.
Kikkoman in a Chinese dish is making me cry
Patricia loves the sound of nails strongly pressed against the chalkboard.
Music in the soul can be heard by the universe.
Reality missed these!! Please do more! Super fun and informative!
I missed Chris videos 😂
YUMMMMM
Golden Mountain is a Thai soy sauce, which is quite different than the standard Chinese soy sauce. If you're wondering why your homemade Thai food is not hitting it, try replacing the soy sauce with GM.
These need to be 2x a month rather than once every 3 months lol
No big deal, but shaoxing is more or less spelled like it sounds?
Also, dark meat is the correct choice, of course.
this dish is one of the easiest and I'm shocked he wasn't very close 😂 its okay
I am waiting for the moment they put something like a hotdog or Döner before him and just say nothing and let him cook in all the forms he can.
Can we please get a detailed video on different soy sauces???
It is not in the stars to hold our destiny but in ourselves.
His boyfriend must love all the food he cooks!
I miss when he went shopping!!!!
The things that one most wants to do are the things that are probably most worth doing.
A thing long expected takes the form of the unexpected when at last it comes.
golden mountain seasoning sauce >>>>>>>
I don't watch anything on this channel..... unless Chris has a blindfold on
Is that how you say shaoxing wine?! Learn something new everyday!
16:50 yeah…no 😂
I never think of the future. It comes soon enough.
In today's episode, Chris burns down the Freedom Tower...
I'm on The Woks of Life team.
I miss Chris in the grocery store!
Definitely could’ve cut that in
actually miss the shopping part of these vids...
