My grandmother used anchovies in tomato and maiorchino (sp) cheese as filling for a portion of these she made. She was from Messina . My grandfather was from Catania. She would make four to six different fillings. In the US she collected stale Italian bread from the markets in the area and crushed it and toasted it. They lived in Malden Mass when I was young. They owned a lot of rental property in the Boston area. At one point they owned the Music store at the corner of Tremont and Boylston and my uncle Frank owned that business.
Anchovies sound GREAT! What was the name of the store? While in grad school, I used to work at the Rattlesnake Bar and Grill and remember a music store there in the 1990's
They look like something I would even enjoy, at room temperature, the next morning with coffee!!! The Italian warmth, in this video, took me back to childhood. I look forward to my future trip even more! Thanks!

Have not had these since my Sicilian grandma made them many years ago. I have to find the right rice and then will have to give a try. They just look so wonderful and delicious! Thank you Eszter and Alfred.

These look delicious. I must try to make these myself as the last time I ate those at an "Italian" restaurant in California was tough as old boots.
Arancini, my absolute favorite meal - very filling. So labor intensive for such a small price.

@@EszterVajda Never made them. Even though I do a lot of cooking, this is a project which requires help from a few people. When in Ortigia at a bakery, I remember watching people in the back room making the pear shaped arancini with such ease and speed. I suppose you can master it if it's your primary job. By the way, your photography is stunning!

Saffron is also called jafran. It's not wrong.
All this time I'm heard of 'arancini', it never occurred to me that it meant 'little oranges'....so why would they be other shapes than round?
Cone shape like Etna :)
When you bite into the "cone" of the arancino, the melted cheese flows over the top, like the lava of Mt. Etna......alrightee then!
Many add peas, I hate the peas.
