    I can tell, the food is incredible and it is local but the pan is of teflon, a sort of hard plastic, not so healthy. If you like some lead free pans, have a look at Visions Corning glass pots and skillets.

    Her instructions say to add rice to olive oil when making the rice balls, but there appears to be something dark (perhaps red) also in the pot when adding in the rice. Am I seeing things, or is she like my mother who purposely alters the recipe so no one else makes it as good?!

      This is her recipe and many Sicilian s do add sugar.

      That may be the modern recipe, which is a sin, but my grandparents from Sicily told me to NEVER use sugar. I am over 60 years old. Not only does it taste nasty, it is unhealthy. To quiet the acidity you use wine, chianti or sherry, depending on the style of zuga
