    INGREDIENTS:
    ☑️For the Aranchini Rice Balls:
    2 Tbsp olive oil
    2 Tbsp unsalted butter
    1 medium onion finely diced (about 1 cup)
    1 cup ham finely diced (about 3 oz)
    2 cups Jasmine rice un-rinsed
    1 cup Chardonnay (dry white wine)
    5 cups chicken broth or stock (hot)
    1 tsp salt (plus more to sprinkle fried arancini)
    1 cup frozen peas fully thawed
    1/3 cup parsley finely chopped
    1 cup parmesan cheese shredded
    4 oz mozzarella cheese cut into 24 (1/2-inch) cubes
    ☑️For Breading/ Frying:
    1 cup all-purpose flour
    3 large eggs beaten with a fork
    1 1/2 cups Italian Bread crumbs
    Oil for frying vegetable, canola, or grape-seed oil

    The arancini is made of Arborio rice, not jasmine rice.

    these look sooo good !! a little bit labor intensive, but probably easier than ravioli or tortellini. we used to spend all day sunday making ravioli when i was a kid (yes, i am italian). i think i still have my grandmother's ravioli cutter somewhere. i only became aware of arancini just recently and i am dying to try it. are there other meat options from ham ? like salami or perhaps thickly sliced (cubed/diced) pancetta ?

    I'm made them right after school today for iftaar because it's Ramadan and this is perfect bc my family loves rice and my brothers love cheese. And I made it without wine and they still turned out perfect.👌👌 Definitely making these again. Thanks!

    My boyfriend and I made these a couple weeks ago and not only do these last a good long while in the fridge, days later they still tasted amazing! We also tried various dips, but a classic marinara or even spaghetti sauce (if you have it lying around like we had) goes well with these arancini balls. Thanks for sharing this recipe Natasha!

    This was a time consuming recipe but the pay off was immense. Literally one of the best dishes I have ever very cooked. Melts in your mouth and paired it with Your recipe for marinara sauce. Perfection! Thank you! My wife was blown away by the quality and taste, and now I have to make them for Christmas dinner according to her. Lol
