I have never regret following you. This is so important. All You said are correct, when i did my class in Spain i was told the same thing about beating butter and sugar till its fluffy, but one thing i want to add about the baking time, apart from the oven temperature, people should know that baking time also varies depending on the cake pan, the thickness and depth.
