Please, my question is regarding "overmixing"
I use spatula to fold in the flour because of the fear of overmixing the batter but it usually not very lush and creamy or have that thorough even look...
so last week I decided to use the mixer to incorporate the flour, the batter was moist, evenly creamed and tasted great but I noticed that it collapsed in height after removing it from the oven, please can you shed more light on VISUAL SIGNS on when to stop mixing the batter. Because I'm hoping to arrive at that point where the height of the cake is retained to a very good degree after removing from the oven.

A visual sign I look out for is when bubbles begin to pop as you slowly mix or turn. That has always been one for me.😊
