You can calculate everything like she did here. For me 1.5kg gives me high 10inches, 1kg batter gives me 8inches high cake n 500g for 6inches(though I have batter remaining) most time that's the same with my fondants then I add extra 1kg to 2k depending on the design, board and just to have excess. You can put your gas at 5k, miscellaneous expenses at 5k, flowers, fruits, alcohol, 1kg of fondant at 1700, stacking board, dowels, transportation, paying of staff etc. I hope this is useful.
