When i lived overseas (not Italy) my favorite restaurant had beautiful risotto, the classic white. It has become a comfort food to me-and takes me back to happy times in . . . Arabia! I wish some chefs wouldn't go on about how hard it is to make-it is simple, just be a little patient. Thanks Laura for presenting this in a way that is accessible to any cook.

Made this today! Used homemade chicken broth and added red bell pepper & mushrooms as well. My hubby looooved it so much!!! Thanks for the videos.
+Dee Massa I saw in another video (Jamie Oliver I believe) that he soaked some dried mushrooms in chicken stock and used that stock alongside the now wet mushrooms in it!

200th episode! yay, congratulations and i hope to see a bazillion more videos:) my husband HATES Chicken fettucine with a passion and will not eat any kind i make, EXCEPT for the recipe you have lol.. go figure. he says its the "weird burnt buttery taste" the juices from cooking the chicken. I used to always wash my pan and then make the sauce but now i know better, thanks to you lol:) love love love you!

Looks good. I had some at a meatball shop and it wasn't like this. But it was still okay. I like that you don't waste any ingredients. I can't stand when I watch the cooking shows on TV and they behind so much of the food in the pot, mixer.
i made this with dry red wine and it was amazing. i think the wine adds a new dimension to the dish

My first time making risotto. I did exactly as instructed here and everything was going great until the end. Came out a little thick. So I guess I'm a mess! But you know, as a Latina it took me a while to perfect my Spanish rice so I don't feel too bad. Practice makes perfect.
I use butter instead of Olive Oil at the beginning, I don't use the celery but a clove of garlic finely chopped. I use to season the stock don't the rice.
:D And if you are vegetarian you can use the vegetable stock... :D

laura is completely right that s really not how it s done in italy, it will not taste the same fr anyone who s had the real deal (if you make it for yourself and are happy thats something else - but be prepared your guests may notice the difference to the real deal :) )

@ArwaLaw some stores sell non alcoholic wine for cooking purposes, but if that isn't available then as she said, you can just put in some extra chicken stock. :) im muslim too, and this dish is soooo worth it ;D

no, because arborio (risotto) rice is special because it has a layer of starch on the outside which gives you the creamy consistency that you need.

@ashram97 She actually replied to someone's comment saying that it is difficult to make them so when she finds an easier recipe she would do it but to give her time. I'd love to see it, but I am very happy with her other recipes in the meantime lol as I'm sure everyone else is. (^_^)

Laura can I use calrose rice instead?
All of these ingredients are available in the area where I live in, here in Indonesia. But the arborio rice is the only exception, if I could ever find one it would be super pricey. Any substitutions proper enough to make this dish cuz I really wanna make one for sure? :D
