    i love how spanish and italian are similar languages and me being puertorrican and all can perfectly understand when you say ''como una onda'' n.n i really enjoy when you sprinkle little italian words here and there c: gives the video such a lovely touch.

    I've made white risotto before and the taste was fine but it would always dry out. Now I know what went wrong. Thanks so much for sharing your skills with us mere mortals. Your Milanese risotto looks amazing. We'll all be waiting patiently for your Osso Buco recipe.

    Very good. (Note: the original recipe of Risotto alla Milanese, also includes ox marrow as an ingredient (to be added together with onions, etc.).

    in pakistan ...we use saffron to add in milk ..its makes it more yummy..like a sweet milk with almont pistachio saffron omggg...em craving some!!...love from pakistan laura!

    Laura, WOW, I REALLY LOVE YOU ! You have really taught me more about My Italian heritage through its WONDERFUL FOOD !     I wouldn't say crunchy. Just compare aldente pasta to pasta that was boiled for half an hour. Notice how the aldente has more resistance to it. Rice tends to be cooked until it's almost mushy. Risotto's rice itself is actually on the firmer side yet the creaminess comes from the starch that comes out mixed with the excess liquids and butter.

    Last! Anyway, I was trying to make risotto yesterday but I failed miserably since I was trying to 'wing it', ie not watching recipe. But this looks really good, Ill try making it sometime properly now ;p

    it' s actually way cheaper and much easy to find, and i can assure you in italy pretty much everyone uses powdered stuff to make it

    The broth wasn't that salty but yeah, I should keep tasting my stuff more to adjust seasoning. I believe the parmesan cheese over salted the risotto, to be totally honest I put like a lot in order to add more body and flavor.

    How far in advance can you make this Risotto. It is difficult to get it to the table right after cooking? How long can it sit on the stove top and can and or how can it be reheated if left over?

    advice, next time try to pound the saffron with a teaspoon of sugar.. .when its powdered...it gives more flavor and more color... and you need less from it than in strand form =)

    of course you can...but if you' re not adding the butter at the end of the cooking process you kinda skip one really important part in every risotto, i actually dont know the translation of the term in english but when you add butter and parmesan cheese at the end it kinda creams a little more and gives you a better creamy texture and helps you with balancing the flavours

    i normally use the safran in the end because then it wont loose its taste and the colour will be much nicer and if i dont use all of the stock the safran would be wasted.
