I like to add the juice and zest of a lemon (use 1 cup of the Arborio) towards the end, a quarter cup of cream and some diced chives to make a creamy lemon parm risotto. It’s delicious.
You don't wash arborio or carnaroli rice for risotto as you need the starch to release while you cook it. It doesn't have spices in it either, well black pepper.

Yeah she did add garlic as that's how it's made and yeah you are supposed to toast the rice. Pretty plain risotto though with no other main ingredient like mushrooms or chicken. The oil tho yeah no way 😂

Thats what i do. Toast it. Then deglaze. Have seen it both ways.

No. I didn’t. Adding leafy greens or protein would be a different dish. Lemon and chives are barely perceptible.

I'm struggling to cook the arborio risotto. Probably will try the other one, Carnaroli.
Cook until it’s still kind of firm. It keeps cooking after you’ve taken it off the stove. It should taste “al dente” or not done all the way.
Carnaroli is nice too, just add more stock if your rice isn't cooked enough or the whole risotto is gluey.
