    I am watching this video in 2021, during lockdown. I recently discovered that there was an Italian inspired dish called Arancini that was famous in my hometown Tripoli Libya but it no longer exist. So here I am learning how it's done the proper way! Much love Laura!

      I'd use mushrooms, most likely white button, since it's the mst accessible variety in my area.
      In my country we have traditional dish - stuffed cabbage rolls, the filling is ground meat or meat with rice, my mum made the filling of fried mushrooms with onions and rice, red bell pepper for my sibling who hates mushrooms.

    I tried the arancini two winters ago when I went to visit my italian relatives and I absolutely loved them, so I've been trying to figure out how they were made since the day I had my first arancini. Yo made me so happy! haha
    My favourite one, of all I tried on that trip, were the ones with muzzarella and bacon filling. OMG, they were amazing!

    I love Arancini! They are also very popular here in Malta. After all, we are a stones throw away from Sicily. We usually have 3 types, and the shape of them tells you what's in them. I have to say tho - I love the chicken and mushroom ones! Do you have a recipe for that?
    Also - why don't you add grated cheese and breadcrumbs to the rice?

    Laura can these be made in the oven instead? I really don't like frying my food in all that oil. I did make them & they were good.

      You can bake but be sure to oil the pan and turn as it starts to brown they are awesome air fried just spray them with oil

      I like her videos but, like Jack mentioned, I too have noticed that she very rarely responds to her subscribers. I must have asked what brand of cookware she uses in more than a dozen videos, and I even DM'd her once, but have never had a response. I also see legitimately decent questions from other people go unanswered. I understand she has more than 1 million subscribers, but even one response per video would be appreciated.

    Can these be baked?

      For sure. Just preheat the oven to 350 degrees and put them on a tray. They will probably come out a lot flatter though since they are not going directly into anything to help retain their shape though. Keep them in for about 20 minutes.

    Could these be frozen prior to cooking? I would prefer to make more than I need and then put them in the freezer for those days am feeling lazy..

    Laura, I just found your channel a couple of days ago, I can't say that I've watched all of your videos, because there is a lot ha, but I can say that I've definitely watched enough to know you are an amazing chef. My grandfather was Italian, and unfortunately he has passed away, but your cooking reminds me of him, especially the passion that you have to cook.       i would replace the beef w feta or ricotta + spinach/broccoli , just cook the rest of the ingredients like she did but dont add the meat obv 😂 and mix em up w the ricotta or feta nd cooked spinach mixture and fill the rice balls ;(

      Just add chorizo, bacon, don't skip the mozzarella, and you'll be fine.

    Just as I watch my soap operas and other daily programmes... Laura Vitale is an everyday must! I come home, log onto CZcams, and there is my daily Laura in the Kitchen episode waiting for me. If a few days ever were to go by without Laura - I would notice in a heartbeat!

    One of the best things about your videos is.. even though some recipes seem quite tedious, the ideas that they give out are amazing. I mean this might look tedious to do from scratch but would be awesome to do with some left over rice and left over meat curry.. and would be a great evening tea time snack..     The egg doesnt stick to the flour... Egg will stick to anything. What the flour does is preventing your rice mixture from soaking too much egg and becoming mushy

      +Igabella Actually, that's wrong. Without the flour, the egg will slide off the rice, thus making your breading patchy and it'll fall apart. The flour gives the egg a better surface so it sticks on evenly.

      +Brandon Quinn no it will not become patchy, I have experiance it myself. What will happen is the rice will absorb so much egg it will fall apart, the flour is to prevent that.

      I think the egg yolks as a binder and chilling the mix helps keep them together. Looks yummy, and the rice balls look good too.

    When we made them in the pizzaria 30 years ago, I dont remember deep frying them. We baked them in the pizza oven, and they where softball sized and no tomato sauce in filling. Just beef and peas, and another was a cheese riceball with just mozzarella filling. But I think for those wanting alternatives, fill these with anything you'd like. I can already think of many ingredients I just cant give it away.

    Laura, I actually made rice balls last winter using leftovers from your butternut squash risotto recipe! First off, I love that recipe so much, and secondly, the leftovers are great for rice balls (when you add the mozzarella, like in this video). I will have to try these rice balls next!
