Coconut Bread - Homemade Cocktail Bun
Dough:
250g (2 cups) all-purpose flour
3g (1 tsp) instant yeast
25g (2 tbsp) sugar
1/4 tsp salt
1 egg
125ml (1/2 cup) warm milk
42g (3 tbsp) soft butter
Filling:
1 cup Desiccated coconut or freshly grated coconut
1 egg
5 tbsp sugar. Adjust, follow your taste.
1/2 cup melted butter. Adjust, depending on the coconut we're using.
*desiccated coconut absorbs more liquid, we might use
less butter if using freshly grated coconut
Topping:
3 tbsp cake flour, sifted.
3 tbsp powdered sugar, sifted.
3 tbsp melted butter
Adjust the consistency by adding flour or butter
Sesame seeds for sprinkle on top
Preheated oven:
Top-bottom heat 180°C (350°F)
Fan mode 160 °C (320°F)
Baking time: 18 - 20 minutes.
After baking might brush with clear honey if you wish.

Most beautiful and relaxing video, Thank you, I used to buy these for my kids in chinatown San francisco, today they still remember how happy it made them when I walk in with a bag full of them, they cost .25 in the 80's. Like always. You can make bread looks easier to make. And it does! I never failed trying your recipe. And thanks to your no knead dough, it became my family favorite bread with various filling and toppings! I can't wait to try this one. Kneading dough is kind of "frightening" and a hardwork. But you did it so easy.

Hi, I just made these. Its a little different then the ones I remember, but these are still yummy....thank you so much for your easy recipe. My husband loves them!!!! Our Chinese Bakery burned down and aaaa' I have tried so many other bakeries aaaaaw'. But these taste better than the other bakeries. I give these a 6.9 - 7. This looks delicious and I can't wait to try baking them! Is the Desiccated Coconut supposed to be unsweetened? And is Desiccated coconut the same as shredded coconut? Thank you :)
Thank you, yes I use unsweetened. You can use freshly grated coconut and use less butter, adjust as you mix it. I've mentioned this in the description.😊

Thanks very much. Yes, you might make a twist by adding crushed pineapple into the filling ingredients. Add the pineapple and coconut 50:50 will work too.
