  • [No Yeast! No Oven] Super Fluffy and Crispy! I can't stop repeating this! Perfect for Breakfast
    * Ingredients
    300g (2 cups) All purpose flour
    6g (1.5 tsp) Baking powder
    2g (1/2 tsp) Baking soda
    3g (1/2 tsp) Salt
    1pc (55 g) Large Egg
    15g (1 tbsp) Unsalted butter
    130g (0.55 cup) Water
    Oil temperature 190°C (375°F) --200°C (390°F)
    Important tips
    1. Because the baking powder will react when it meets hot water, so the water must be cold water.
    2. After 10 minutes resting, knead and fold the dough to get a smooth surface. Shape the dough then rest at room temperature for 4 hours or keep it in the refrigerator overnight.
    3. Make sure to sprinkle more flour on the mat to prevent sticking, roll it into a long strip and cut it into strips about 2.5-3cm wide.
    4. Dip chopsticks in water and draw a line in the middle to make the middle stick together well. The sides should be separated to make the fried donuts look good.
    5. The oil temperature control at 190 ° C (375 ° F) - 200 ° C (390 ° F), frying at high temperature
    6. After the donuts float up, you should keep turning them over. When they are set and no longer expand, then do not turn them over and let them fry for a little longer on one side and then turn them over and fry the other side. In this way, the donuts will be more crispy. The butter in the dough can also makes the donuts more crispy.

    I followed your instructions and the results came out amazing. Coming from an Asian family. This was my favorite thing to eat with rice porridge or Pho or just for a snack.     I’ve been looking for this lovely fried dough for 25 years. I could not be happier to have this video just show up on my home page. When I moved to Georgia, a Chinese restaurant near where I worked served a dish called Dragon Horse Shrimp. It had one inch pieces of this dough in a light sauce that is similar to shrimp and lobster sauce but much tastier. I moved far away from this restaurant so I didn’t get to have this dish again. Years later It had closed or moved because I could not find it again. For many years it had been voted as the best Chinese restaurant in the county. And no other restaurant I’ve been to has served anything like it. All these years I have really missed this dish.

    When i was studying in beijing, you tiao was always served for breakfast at my campus’ cafeteria. I would always pair it with hot soy milk and it was a delight, especially in winter. When i got back to my home country, my aunts would either over fry them or it wouldnt be as airy as this one. Now that i’ve found this recipe, i cant wait to make it!!!

      @@derpderpin1568 I wish I could agree with you. "Finally" because most still jump around, skip steps/ingredients/measures, talk for 10 minutes before actually doing anything, or just brag about how good theirs are without being especially related to making them.
      But more importantly, what magic are you using to find good cooking vids (with random suggestions via youtube)? I want that kind of magic. Share the wealth! :)

      Have you tried to watch some videos from Chef John from Foodwishes on CZcams? He is funny and makes delicious recipes! I have tried many myself and they are sooooo delicious 😋
      I know many, many more very good and to the point cooking channels, but before I give you more channels with recipes to look at, is there perhaps a specific type of cuisine or a certain kind of food you like the most? And what types of food do you dislike?
      I ask because Chef John from above makes a lot of Americanized recipes from all over the world with from time to time a few truly authentic recipes sprinkled in, but to make sure I don't give you channels with recipes you wouldn't like, I first need to know which particular kitchens you do like 🤓👍 Or maybe you don't really have a strong preference for any particular type of cuisine or kitchen and you like pretty much a little bit from everything? 😇

      @@TheBauwssss I tend to bake quite a bit more than fry, but I do make a bit of everything. Some of my favorites are breads, sauces, and grill/outdoor cooking. I'm a fan of pan-fried or seared things, but deep frying is generally not something I do much with (unless it's fry-bread or some kind of simple puff). Pastries are fun.
      Oh... and though I've tried many times, I've yet to successfully make a good fried rice dish. I know.... it's a crime.
      As for world-foods, I'm fairly eclectic. Korean, Japanese, Chinese, generalized Asian, Brazilian, Native American (I'm speaking more the tribal, not 'NewYorker', heh), British, French, German (though I shy away from most of the beer-related dishes), Egyptian, Norwegian... you get the idea. About the only thing I really don't do much with is Broccoli, Cauliflower, and Sour Kraut simply because I despise the texture, flavor, or scent of those things cooking respectively.
      But hey, if you have an amazing recipe or channel that you think might defeat even that, I'm open to just about anything.

    Finally!!!! After 30 years I could finally found this recipe😭.
    In my country, Perú, nobody make these at home so you can only buy it in “carretillas” this is almost the exact same recipe the only difference is that you make them way smaller and instead of water you use anise tea. Thank you soooooo much they came out PERFECT 🎉

    This is cakue in Indonesian culinary. We eat this bread with chicken porridge. Some Chinese restos serve this bread with fillings made from shrimp and chicken mix. The dish is called lumpia cakue. I just learnt from this vid that making cakue is actually not that complicated. Thank you🥰

    Always loved eating this with congee, not sure how they wrapped it with rice noodle though, that was also a very delicious variety of this, definitely can't wait to try this and make some for my mum who unfortunately went blind 2 years ago!

      I think for the rice roll variety, it's made the same way as the other variations of rice roll[chéungfán] (like hā chéung and chāsīu chéung), fry the donuts and steam the rice roll and then lay the donuts on the rice rolls and roll it up.

    For anyone wondering, this is a reaaallly old popular Chinese street snack, popular to this day and I love it, you can eat it in many ways but the two traditional styles are dipping it in soy milk or a Chinese style Rice porridge. In English it's literally just called fried dough stick.

      It's also popular in Indonesia brought by Chinese merchants way back in time and we call it Cakwe, we usually eat it just as is or dipped with hot sauce or also with some porridge.

      Do they not have this in vietnam ? In Thailand its called ``Pa tong go`` and its a very popular thing to eat in the morning as breakfast.

    Bánh giò cháo quẩy (fried dough sticks)!!! One of my favourite foods, especially with a nice hot bowl of Vietnamese cháo gà (chicken congee) for breakfast. Sadly, I haven't had any in over a decade since there aren't any Asian bakeries in my town that sells them. Thank you so much for the recipe. I will definitely give it a go.

    It looks like "Cakwe", one of street food in Indonesia. Usually combine with a kind of chili sauce but have watery cosistency. It contains water, chili, gralic, sugar, salt, and vinegar (my mom always "correct" the taste and it turns out really good!). Some seller just use chili sauce and add some water, but i personally don't like this one.
    In the past, i have made Cakwe twice but never succeed haha

      In Cambodia, I believe it’s called Cha Quai. I’ve rarely seen them served in the U.S but when it is served, I usually see it eaten with curry or pho.

      @@jamesdante1101 Wow thank you for sharing! I was searching for same recipe from indonesia youtuber. I found out, there is same food in Thailand too but they combine it with pandan sauce.
      This food is more famous than i thought haha. I will try Cha Quai when i visit Cambodia someday 😆

      @@jamesdante1101 Just curious what part of the US you are in. The are staples and most commonly served with porridge. Another dim sum creation which is also common has these “Chinese donuts” wrapped with shrimp rice roll. They’re common and served everywhere.

    It's very similar to Indonesia street food called Cakue. We usually eat it with tomato chili sauce or peanut sauce. Very delicious and sometimes used as side dish or topping in some food.

      I usually tore it in half, spread Kaya on one half and butter on the other. Then stick them back together and cut it in bite sizes.
      Kaya + butter is heaven

      We Thai ( mostly from Thai-Chinese community )
      have dessert version of this using pandan castard
      or sometime just condense milk
      try it! it simple and delicious
      and like many said, eat it with Congee is a common way to eat it.
      it give more dimension to the dish

    We call it E-Kyar-Kway in our country Burma and we usually have it as breakfast paired with sweet tea or coffee or whatever you prefer.The secret is that you have to dig it in your preferred hot drink for like a second I personally think it’s tastier that way.Some people also like to have it with boiled/steamed garden peas .

      OK, I felt some pressure to try the recipe sooner rather than later, so here is how they turned out. Not too bad, but definitely didn't look as good as the version done by experienced hands in the video. I should say I am not a baker, so I'm not very intuitive when it comes to dough.
      I only fried a couple of short ones to see how they turned out. After taking the dough out of the fridge, I cut off a small piece and formed two short ones (about 3.5 inch long). Off the bat, I noticed my dough was not as elastic as the video's. The first yoh tiu (in Chinese, literally oil stick) was disappointing in that only one of the two pieces of dough stuck together puffed nicely. The other piece was rather flat.
      I thought maybe the problem was the oil got too hot. Taking the temp, I found out it was indeed way too hot. After cooling my oil, I fried up the second one. This time, both halves puffed, but one half (call it top or bottom) was still much puffier than the other. I measured the temperature of my oil again, and this time it cooled to about 340F.
      So, my recommendations based on my limited experience are:
      1. Try to make sure your dough looks like the dough in the video at each stage.
      -- My dough was drier than the video's just before the 10 minute rest. I probably should have added a little more water.
      -- My dough did not look as smooth as the video's after kneading. I probably should have kneaded it more before wrapping and putting it in the fridge.
      2. Try to keep your oil at the right temperature.
      Good luck and feel free to give me some pointers. I will try this again.
      Edit: I fried up more later in the morning for family. Paying more attention to the oil temperature this time, there was more consistency in the puffiness but still a couple halves were much flatter. Maybe the problem is the baking soda, baking powder, and salt were not evenly distributed in the dough?
