- The only thing better than cooking over a campfire outdoors is cooking something from another region! Im used to southern campfire cooking but not much from other parts of the U.S.A. My friend Chris sent me a pack of Tamaya Blue Corn Pancake mix from Native Seeds/SEARCH. He also sent along some Cheris Desert Harvest Prickly Pear Cactus Syrup. We mix up and cook this delicious stuff over a Lodge cast iron griddle out in the woods next to our favorite creek. #lodgecastiron

Well David & Nick y’all really brought back a bunch of great memories for me with this video. I’m 78 now and my boy is 53 and if I can get the tears to quit welling up in my eyes,I’ll finish this post. Anyway this reminds me of him so much. We have done so many fun things together and had many wonderful talks about everything under the sun. I can not imagine my life without him in it,-so thanks for the memories fellows. I enjoy y’all’s channel more than any other.

When I watch you guys go about your days adventure I get so focused that I forget you are sitting in the middle of the woods which is the reason I watch. Great to see yall out together again. Growing up my dad and i would go camping, usually involved floating. I quickly learned after i got in my mid teens, to take over camp cooking duties.
He really liked everything WELL done, me not so much. Never figured out if he did that on purpose to get me to take upcooking or not. Sure seemed that he enjoyed his coffee a lot more when i took over cooking.

I love cornmeal pancakes, aka hoecakes. I even like hush puppies with pancake syrup. There is just something about the flavor of fried cornmeal that pairs well with that sweet goodness of high fructose corn syrup.

Great video! Pancakes and biscuits fluff up from CO2 gas released by the baking powder when it’s heated, that’s why your oven and griddle have to be HOT when you start cooking. Over-mixing either one can make them tough, so can flipping them too many times. I imagine the corn alleviates that to a degree. I bet they were so good! Percolator coffee is the best in my opinion, wish I’d been there to help eat all that.

Great cook & eat video! The Pancakes look yummy! I used to make prickly pear jelly & syrup. It is made using the red fruit of a prickly pear cactus (be sure to singe the stickers off after gathering them 😂). When cooking the fruit to extract the juices, i could not stand the odor that came off of it. It filled the house & I would lose my appetite for a day or two. I never acquired a taste for the prickly pear jelly & syrup, but most of my family & friends loved it.

Linda, you’ve probably tried nopales; the cactus pads dethorned and cut up. They are full of fiber and calcium. Any Latino market has them in jars. The syrup is from the fruit. They are green and ripen to that burgundy color. Latin markets may have them to.

Your outdoor-nature is very different from ours (Holland, flat as a pancake) and if we carry a machete here a swat-team pulls out within two minutes! So we carf spoons with Victorinox! Hey, works just as well as your big old knife, we just look more Swiss doing it 😁 Oh, those pancakes look delicious!
Oh yes, we love sausage and grits! Very little is flat here, we have a lot of hills and a few mountains. Ive glad we have freedoms round here, you can wear a machete pretty much anywhere and no one cares!

I thought you were overmixing the batter. I only mix long enough to get everything all mixed with no lumps. Obviously I was wrong based on your results. I liked your comparison to buckwheat; it gave me a clear picture of what to expect.
One of the highlights of watching my daughters grow up was making pancakes together on Saturday mornings. They helped me get all the ingredients together while the griddle heated up and then make the batter and cook a stack of pancakes, and celebrate the results of delicious pancakes which they helped make. You and Nick reminded me of some good times.
