Hahaha...if you haven't watched him on his tv series/episodes...you're probably the ones giving negative feedback. Sam is known on tv to be extremely sarcastic and cooks un-professionally (just like an average joe) that's what makes him appealing.

Three suggestions:
1. i would have taken the shrimp off the heat at the 1min30 mark
2. a bit of pasta water in the mixture to stop it seizing up
3. put your plate on the pot of boiling pasta for a couple minutes to warm it up, to stop the pasta seizing up on the cold plate

I watched back when they were still small. Now they have really made it. Took them many years!
First meal of the year...turned out to be even more tasty than expected! I love Sam; I always look for ideas in his recipes. No vermouth in my cabinet so I used broth and no parsley so I used cilantro. No rules in my kitchen, as long as it tastes good đ Happy New Year everyone.

I made this recipe for dinner last night, swapping out the parsley with an Italian parsley I grew in my very own herb garden and I used white wine instead of vermouth. It is a simple, easy and delicious, recipe that you must cook, it's amazing! đœïž Thank you Sam.

everyone thats butthurt in the comments needs to relax. The guy is joking around and in the end is actually a really good recipe, one of the best for this sauce. The guy knows what he's talking about and executes it very well. he stated 8 minutes in the begging and actually pulled it off. Yeah he's a little arrogant but he must have been a chef at one point in his life because all good chefs are when they are working. In fact, i don't blame him at all!!! the camera man was absolute garbage! Great video Sam! These people get their feelings hurt way too easy.

Iâve made scampi many times in the past, but I decided to try yours. This is the best tasting scampi Iâve been had. The flavor absorbed on the shrimp is incredible. Added this one to the books.
ProTip: a little mise en place goes a long way.
Chef John has a great recipe for garlic shrimp, and he says the same thing. He says "the foodies call it mise en place; us regular folks, call it prep, which has fewer syllables and sounds much less French." đ Basically, the idea is that the cooking takes so little time, unless you want overcooked shrimp, that having everything ready to go is best. But, let's face it: half the appeal of Sam's videos is him yelling "oh shit" and grabbing stuff in a panic.
That is true. Many people don't understand to get all of your ingredients together prior to beginning. It makes things soooo much easier. That was the first thing taught in Culinary School.

If he cooked those shrimp a second longer, they would literally turn to rubber.
They are overcooked.They wouldâve continued cooking after he had plated the dish. They probably were rubbery by the time it was eaten.

Is there a good substitute for the alcohol used in this, I can't use any of that.
The alcohol cooks out of it.
Seafood stock. Or even chicken stock. I used just pasta water and it was fine.
When I am out of white wine, I use apple cider vinegar. It sounds weird lol but trust me, it works very well and is the perfect substitute. When using chicken broth it tastes like something is missing, imo. With the acv, it doesn't taste like anything is missing.
