5 Minute Laksa Curry with Dr Rupy Aujla aka Doctors Kitchen

Ingredients:
For Curry:
1 tbsp oil
4oz (100g) whole wheat noodles
4 cups (1 litre) vegetable stock
1 zucchini (grated)
1 large carrot chopped (half roughly chopped, half grated)
4 oz (120g) tempeh (cubed)
1 tbsp tamari
1 tbsp maple syrup
For Sauce:
2 cloves garlic
1 thumb size piece ginger
1 thumb size piece tumeric root (about 3 to 6 tsp if using dried spice)
juice half a lime (about 2 tbsps)
1 tbsp corriander
1 1/2 tbsp cumin
1 fresh red chile
14oz (400 ml) can low fat coconut milk
3 tbsp tamari
1 maple syrup
Fresh Basil leaves to garnish (or alternatively cilantro)
1 - Add wheat noodles to 4 cups water in a put and bring to boil, cooking at least 4 minutes.
2 - Add tablespoon of oil into non-stick sauce pan and brown tempeh.
3 - Add ingredients for curry sauce into a blender or food processor and blend until smooth.
4 - Grate zucchini into sauce pan with tempeh, then add in chopped and grated carrot.
5 - Add in tamari and maple syrup.
6 - Combine curry sauce into sauce pan with tempeh and vegetables.
7 - With slotted spoon remove noodles from vegetable stock and combine into sauce pan with curry.
8 - Add a bit of the vegetable stock to curry mixture to slightly thin (add to desired thinness).
9 - Garnish with basil and serve.

Don't worry - most likely it takes almost everyone 30 minutes or so. For one - they have all the ingredients laid out - so unless you time yourself with all the ingredients laid out - you are already way behind just finding them and preparing them. Also - they don't have to check the recipe every minute like we do. There are of course two of them and they are masters of their craft. Still - 30 minutes for a delicious homemade meal is worth it. Love this channel and these DUDES!

I just tried it and I am impressed how delicious it is. I have spent much more than 5 min to buy all the ingredients and prepare everything but it was worth it. I used mango instead of maple syrup and it seems sweat enough.

Great recipe. Good to challenge yourselves it makes the video more interesting and you also introduce humour and excellent special guests. The Doctor is right whole meal pasta is better for you because I only eat whole meal pasta and brown rice, the only time I eat white rice is when it is Arborio rice.

I tried the recipe turned out awesome, I just didn't have fresh basil but everything else worked great! It's really simple indeed... and I cooked my pasta without the veg broth

The Tamari sauce had plenty of salt for this dish. 🤝
I guess they use Tamari tan Soy as Tamari has less sodium content which means less salt :-)
Light coconut milk has icky additives. Just use whole.

Haha yea that's true. But the point of this series is to show that ppl can make delicious comforting meals when they don't have much time :)
people think that home cooked meals take a long time, so the point is to show them it's not true and encourage them to get into the kitchen and try to live a healthier lifestyle. :) yes it's 2 of them and they are rushing, but it wouldn't take for a regular person that long to cook this either

Watching the lads make this tells me I can do it in 20 or 30 minutes, relaxed, with no advanced prep needed. I love this series.

Set noodle nests to boil in stock
In a blender...
2 garlic cloves
Thumb ginger
Thumb turmeric
1 tin full fat coconut milk
Juice half lime
Coriander seeds
Chilli
Cumin seeds
3 tables spoons tamari
1 table spoon maple syrup
Blend all ingredients until smooth
Fry 120g tempeh in pan along with
1 grated courgette
1/2 chopped carrot
1/2 grated carrot
Add the above blended mixture
Add noodles and some stock to pan
Garnish with coriander / Thai basil / sweet basil
That’s not a laksa lads... come on...
Im vegetarian and from Malaysia..that is very weird laksa..i think this would suits western people, not Asian...
What would you do differently? I d love to know, never been to Malaysia:)

I guess this is the ‘cheats version’ of Laksa , as I don’t believe this is even closer to the authentic version... 🤔😬 I’m afraid you’ve missed out few of the ingredients which are the key ingredients for this dish, and you’ve seemed also to have messed up slightly with the preparation ...It takes several minutes (minimum of 30 minutes) for the Laksa paste and coconut milk to blend and simmer altogether in the broth with the shrimp shells and vegetable or chicken stock... Typically, a laksa is not a laksa without its distinct broth, (made out of shrimp shells). I’m very much a fan of most vegetarian or vegan-friendly diets , but this particular dish will not taste the same, therefore will likely lose its distinct flavor, if you keep it vegan/ vegetarian. The authentic version is far more tasty. (You try it first and you’ll know 😋) Although, you don’t need to include poultry or any other meat in this dish as long as you keep the shrimps shells for the broth preparation. As that’s the top ingredient for this dish. Across a number of South East-Asian countries (Thailand , Malaysia, Singapore) you may find different versions/ variations of Laksa (each country or even regions/ provinces within the same country will utilize its own cooking style/ techniques and seasonal ingredients which may differ slightly from each other) but the key ingredients remains the same.
