- My family eats chicken curry and curry laksa several times a month...that's how much we love it! This time around, my mum shares her much-loved fusion laksa recipe - the very best of Malay and Chinese cooking!
What special ingredients do YOU add in your laksa?
RECIPE

2 brown onions
5 cloves garlic
½ cup olive oil
3 tbsp dried chilli
3 tbsp curry powder
2 fresh chilli & 2 red horn capsicum for colour
Knob of ginger
3 lemongrass
2 sticks of fresh curry leaves
Handful of tamarind pieces
200ml coconut cream
Salt and pepper to taste
Water for soup
1kg of chicken
1 bag of fried tofu puffs
1 bag of fish balls (optional)
Rice vermicelli or egg noodles
Sliced cucumber
Mint leaves
Lemon wedges

What a well made video, and so entertaining! What is ‘sambal-bluck-chun’ in the magic chilli paste from your mum?
Sambal belacan is dried chilli that has been cooked with belacan cubes until it becomes a paste. It forms a base for a lot of dishes that are spicy 😉
