Calamari stuffed

Calamari stuffed with what?
some fill it with one thing, some with others, but the final aim is only one: it has to be BBBono, otherwise what kind of squid is it?
I have my own recipe, which I experimented with after several trips to other regions.
It is a summary of many ways of preparing it.
Neither the best recipe, nor the worst, but of one thing, I am very sure: those who follow my recipe will not regret it!

Ingredients for 4 people :
4 medium squids
4-5 medium-sized potatoes
40 g taggiasca olives
15 g desalted capers (or salted if you have nothing else)
2 anchovies in salt or oil
50 g parmesan or pecorino cheese
2 garlics without souls
2 fingers of white wine
20gr butter (for the puree)
evo oil
Tomato concentrate
1 chilli pepper, nutmeg, parsley, sage, rosemary, thyme
1-2 tarragon leaves
A few Roman mint leaves
Fresh ginger grated in a blender
Untreated lemon and orange peel
