Slow Cooker Apple Butter

  • I picture apple butter at local fall festivals: large cauldrons of apples cooking and smelling like autumn. On my farm, we even have some large brass buckets that, years ago, were used for apple butter making. Crazy right?!

    Since I don’t think anyone needs 100 quarts of apple butter, this recipe is pared down and cooked in a slow cooker! All the autumn spice with amazing apple flavor. Plus it’s super easy!
    INGREDIENTS
    - 4 qt (approx. 8 lbs) apples, peeled and sliced
    - 2 ¾ cups sugar
    - 2 ¾ tsp cinnamon
    - ¼ tsp ground cloves
    - 1 star anise pod or a pinch of anise seeds (optional)
    - 1 tbsp lemon juice
    - ¼ tsp salt
    INSTRUCTIONS
    Wash, core and take out the seeds from the apples. Slice into 1/2” pieces.
    Measure out four quarts of apples. Pour all apples into slow cooker.
    Add sugar, cinnamon, cloves, anise pod, salt, and lemon juice. Stir to incorporate everything.
    Turn slow cooker on high for 4-5 hours. After the first hour, remove the star anise pod, if added. Stir the apples every so often.
    Once the mixture is bubbling and cooking well (after approximately 1-2 hours), turn the slow cooker to low and leave for 10-12 hours. I usually do this in the evening so it can sit on the low setting overnight.
    After ten hours, start checking the slow cooker. Stir mixture using a strong wire whisk or hand potato masher to break up the apples. Turn the cooker on high and remove the lid to cook off extra liquid.
    Once the butter is the consistency desired, use a blender, food processor, or immersion blender to break down the rest of the apples to achieve an even consistency.
    Let cool. Freeze or can the mixture.

    Morning Kaleb 🤗 Sent some of my Blue Ribbon Applebutter to a friend in Colorado and he used it on a pork roast while it was roasting! 😍 I had never even thought about that, but DUH, huh??!! 😉 Been making it for YEARS as well, although I cook mine in the oven in an enamel roasting pan..... for about 10 to 12 hours 😁

    Apple butter is one of my favorite things. I used to make this with my Nana when I was young, which was a very very long time ago. I like the idea of the slow cooker!!

    I like to use a immersion blender on my crock pot apple butter.. It works well. 😉

    Kaleb, I just absolutely love your recipes and technique. There are so many nuances to making these classics and its like you have done them 100 times and know where the rough spots show up.     If you don't have a blender you can use a bullet blender. That's what I use. It came out perfect.

    Hey Kaleb, I'm from the little island of Jersey (just off the north coast of France, you'll have to really zoom in to find us 😊). We have a local preserve call Black Butter which is made mainly of apples. I have ripped a copy of the recipe and a short explanation of how it was made many moons ago. Having seen the variety of different recipes you whip up, I am willing to bet that this is something you may like, it is a little different but quite a hit here. I would be more than happy to send you some if you wanted to try it first..... anyhoo, here goes.... (Ripped from the BBC website and its for quite a large batch)
    Local women used to get together to peel hundreds of pounds of apples whilst the men and children would gather enough wood to keep the fire going for almost two days.
    The fire was usually lit in the afternoon, after which the cooking would go on all night and well into the next day. Today, there are only about four groups who still continue to make black butter.
    Ingredients
    10 gallons cider
    700 lb sweet apples, peeled and cut
    20 lb sugar
    3 sticks liquorice, finely chopped
    24 lemons, sliced
    3 lb allspice
    Method
    Boil the cider until it turns to jelly. Add the apples, stirring all the time to prevent sticking. Two hours after the last batch of apples has been stirred in, add the sugar, liquorice and lemons. In the last ten minutes of cooking add the spice. Store in jars.

    A play with words... depending on where or what country you originate from huh! lol! Apple sauce, apple puree, apple butter. I was waiting to see at what stage u would add a dollop of butter hehehe 😉😁.

    I made it and we couldn't stop eating it. I was about to distinguish the peels and will leave them out next time. I didn't have brown sugar on hand so I added 1/2 cup molasses. Great video!

      I just learned that you can make homemade brown sugar by adding 1-2 TBSP. of Molasses to every 1 C. Pure Cane Sugar (white sugar) They say it doesn't get hard like store bought brown sugar does. You have to keep it in an air tight container.

    My friend taught me to put in crock the night before, all ingredients, and start when you get up in the morning when you leave for work. It softened down overnight. I also cut back on the sugar to just a little under two cups, made a few times with splenda. Love the anise idea also. My friend swears if you have this on during a open house you'll sell faster.lol

    Glad to have found your fun slow cooker apple butter recipe. I was about to cook it on the stove! Now how am I t find that star anise? Lol! Love that you also included the recipe and directions in your description box. Also just FYI I'm a little confused about one part if the directions. High 4-5 hours then turn to low or after 2 hours? Thanks!

    I’m guessing that the time and temperature don’t matter much, since your video is different than your recipe. However, it’s a bit confusing with the inconsistency. Just found your channel. So far great videos.

    I would have thought an immersion blender would have worked better - no ladling required. Apple butter is also a big thing in Southwest NY - we have lots of orchards as well, so maybe that's it. The local museum where I grew up had a history camp where we made it in those big brass buckets, I agree the slow cooker is easier!

    Can anyone suggest what we could use instead of sugar… maybe honey or something healthier . (Genuine Maple syrup is not readily available in South Africa) and you have measurements I would appreciate that as well . Thank so much

    I haven't acid reflux and I have to really be careful the acidity and I also have to be careful of my sodium intake. I also am taking a I think you call them beta blockers for high cholesterol. So I really have to watch brown sugar is there something I can use in place of brown sugar to make the apple butter?

      Makes it safe to eat and seals the jar. Basically a canning technique.

    Ohhh... this looked so good, I had to try it! Done - so darn tasty! And jarred up nicely for Christmas presents! My neighbour who got my first jar, JUST LOVES IT! I've just had a call from an older German lady - I popped a little bag with a jar of Apple Butter & some crocheted 'snowflakes' on her doorstep this afternoon (she was out) to say she'd had a try of it & it is so very tasty! Can she have the recipe! SUCCESS!! Now... big question - do I give those other 'ear-marked' jars away or do I keep 'em??? Thank you for the recipe! And for the instruction! You made it seem really easy - and it was! MERRY CHRISTMAS!

    There was this one older lady I knew, she's has passed on, but she thought that apple butter was apples mixed in real butter. But she never heard of it so didn't know.

    Hi Kaleb im making your apple butter in you ingredients you dont say brown sugar you just say sugar i had to play you video again to be sure its brown sugar like i thought thank you
