- Unlike the jam alternative, strawberry butter is a delicious, spreadable sauce that can’t be beaten. Made from fresh fruit, it’s a super simple recipe made with only four ingredients. While it can be kept fresh in the refrigerator, this butter is especially good when it’s canned for shelf-stable storage. Either way, there’s never a better time than now to make this recipe.

00:00 Intro
01:21 Mashing the strawberries
03:29 Cooking the mixture
05:55 Blending the butter
07:42 Pouring into jars
10:00 Canning the jars
12:18 Tasting the strawberry butter
INGREDIENTS
- 3 lb strawberries, cleaned and hulled
- 1 1/2 cups white granulated sugar
- 2 tbsp lemon juice
- 2 whole vanilla beans, sliced in half lengthwise
INSTRUCTIONS
- Place the cleaned and hulled strawberries in a large 6-quart heavy-bottomed stock pot or Dutch oven. Add the sugar and lemon juice. Use a potato masher to roughly mash the fruit and draw out the juice to mix with the sugar. Add the sliced vanilla beans and place over medium heat. If canning, have the water bath, jars, lids, and rings ready.
- Slowly bring the mixture to a boil, stirring to ensure the sugar is not sticking to the bottom and is dissolving. Once boiling, combine to stir and boil until it is at a rolling boil. A rolling boil is a boil that will not stop when stirring and continues to boil. Adjust heat as needed to keep the rolling boil for 20 minutes. Skim any foam that forms on top off and set it aside.
- Once the mixture has boiled for 20 minutes, remove it from the heat. Pull out the vanilla beans and squeeze out any remaining seeds from the middle into the mixture. Using an immersion blender or canister blender, blend the mixture until smooth.
- Pour the strawberry butter into prepared 8-oz jars. If storing in the refrigerator or freezer, pour into containers and cool. If canning, water bath the jars for 10 minutes. Once the jars are finished, remove them from the water bath. Cool for 12 hours before removing the rings to check the integrity of the seal.

i started making jams as a way to distract myself from some depression i was having in life. and by the end when ive tasted how amazing what i made was and everything was canned, i was looking forward to giving what i made away to those i cared about and give them something homemade :) giving to others always cheers me up !
❤ niice 😊
How sweet ❤
This would be good on icecream got to try it
My mom made apple butter, peach butter and pumpkin butter. I never knew that butters could be made from other fruits. I will be giving this a try.
I love apple butter!
Peach butter sounds delicious
I second how delicious peach butter sounds!!! I need to try that!!!
oh yum..thanks for this idea ! the wheels are turning...note to self: order more jars, lids, labels......@@sharonbrame9613
i had no intention of even finishing this video until i actually planned on making some apple butter but the mans voice hooked me, i could listen to happy people talking about simple things that make them happier for hours on end lol
I would highly recommend replacing the lemon juice with a good quality balsamic vingar. Really adds another level to strawberry jams.
That sounds tooooo sweet.
That sounds amazing 😮
I'm mixing strawberries and blueberries and making this....delicious...❤😊😊😊
Lemon juice is the best pectin ever, also the stones of fruits like peaches and plums. Just ties the pits in a little muslin bag and cook with the fruits if you’re trying to avoid commercial pectin. Thanks for this I have 2lbs of frozen mangoes in the freezer and you’ve given me ideas x
Oh! I didn't know about the pits for pectin! Thank you! I have a corn allergy and it's in most commercial pectins so this is very helpful.
Apple peels are loaded with pectin 😊
How many stones do you use?
Every fruit has it's own pectin. Macerating the fruit is a great way to bring it out. I do that the night before, refrigerate it, then blend and cook until thickened. Don't forget the lemon juice 😉☺️😋... The vanilla bean adds an amazing flavor to it too.
@@prettybrowneyez3338i pick a bit of under ripe fruits as they tend to have more pectin (according to my grandma she would use our small gravenstien apples and make pectin I do remember the apples were not quite ripe yet)
If I got one of these jars as a gift for Christmas, that would make my Christmas very merry. Wow looks delicious. I have to make it.
This is the most approachable canning guide.
I just got some strawberries from our local farm and will have to try this. My family loves apple butter so I am sure this will be a hit too. Thank you for the great video!
How do you make the apple butter?
My mouth just waters watching this Kaleb...😂😂
Not sure why this came up -but I just finished making plum butter! I had a bumper crop this year so gave a bunch to my sister! And yes, I made it the exact same way for some; to some I added cinnamon, nutmeg and ginger ! A hint: if your fruit is very juicy - break out the slow cooker and cook the prepared fruit with the lid tilted a bit to let steam escape to reduce it. So much fun, easy to do - and a great video also!
oh wow, never heard of plum butter...I'll bet it turned out wonderful!
One of the best things I ever tasted was from our apricot tree in the middle of Los Angeles City decades ago. My mom threw a giant bowlful of the apricots from our tree that year into a big ole’ pan and cooked it down with a (little) bit of sugar and asqueeze of fresh lemon. It was so simple and delicious we put it on toast, etc., or just ate it as a little dessert. It worked for so much! THANK you for this strawberry recipe!!
yes please !
I have a friend who makes me Jalapeno jam every year for Christmas. one of my favorite gifts
I’ve made apple butter, peach butter, pumpkin butter before but never have I thought of using strawberries- this is a must make for me thanks for sharing your recipe
I've never thought of making strawberry butter (I HAVE made apple butter) and cannot wait to try this. Thank you SO much for sharing this tutorial.🎉
When I make fruit jelly or butters, I always let them macerate in the fridge the night before. That way they let all their juices out and the sugar is dissolved. I blend the fruit and then let them simmer until it thickens. I love your channel because it thoroughly explains the process of canning. Thank you, your beautiful mother and grandmother for these tips on home canning 🙏🏼❤️ I don't like the store ones because of the sugar content and these homemade ones are all about controlling how much sugar you use. Which I'm going to choose to taste the fruit over too much sugar 😋😋🤤
Not to mention that the store-bought ones just don't taste quite right. It's like they're using the lowest quality of fruit possible and try to use sugar to compensate for that.
@@shadowtheimpure I noticed that too. I think it's artificial flavor, which is stated in the ingredients, and not real fruit.
Yummy 🍓🍓🍓🫙 I might actually be skilled enough to attempt this! 🤣 Thanks, Kaleb.
I would love this as a gift. I think it would be great on ice cream!
First time here and I have to say, Thank you for being so thorough in your explanation of your canning process you described every little detail and why and I've not found that in other people who have done little canning videos like this I have been so afraid to can cuz I'm afraid I'm going to screw something up because I didn't know the why and the fine details and then I'm going to open it up six months later and kill everybody seriously that's how deep it is in my head LOL. I will say this will be the first time I will make an actual attempt to can something just because of how thorough you were on your details. Thank you again
Your joy is infectious. I love your channel!! I did my first water bath last night. I made a cornicopia of blackberry jam and my mom made beautiful jam bars with them. For my birthday my mom made a cake with a beautiful blackberry jam icing using cream cheese and butter; a gorgeous purple icing.
I made this today. I must say - I had 3 lbs of strawberries, cleaned, cut and cooked. Ended up with 4 8oz jars of strawberry butter. BUT, boy is it ever good!
I had leftover strawberries after our great grandsons went home. I saw this video this morning and making it now. It will be delicious! I may put mine over some vanilla frozen yogurt. Mmmm good!
Oooh I love everything strawberry and had no idea fruit butter existed! Thank u so much for sharing I am def goin to make this ❤xxx
This is amazing. I saw this video and made some last year, the minute strawberries were ripening up from the garden this year my family asked me for it. It's on the stove right now! I've also done it with blackberries and peaches.
Inspired heck yeah... I can see a strawberry vinaigrette served over a spinach strawberry salad with roasted nuts of your choice.😋
You call it jam, I call that compote. You’re the neatest cook ever! I just made strawberry bread, my rhubarb strawberry compote was awesome. I wonder if you could this with tomatoes?
I suspect if done with tomatoes, it ends up tomato sauce. I suppose it depends on the other ingredients, as a tomato sauce would more likely just have a touch of salt in the plainest version.
@@TheMimiSard after it cooled down, I added mascarpone. Tomato Jam is definitely thicker.
I was thrilled when you added the lemon juice to your strawberry butter. I always add a little lemon juice and the zest too to all my jellies and preserves. Except for peaches. That I add orange juice and zest. You're the first home canner that I've seen do this.😊 I've never heard of Strawberry Butter before but I'm sure going to make some this canning season. That would be fantastic to spread on the cake layers of a strawberry cake. Thx.😊
Why can't you use lemon juice with peaches?
This would make the most amazing Victoria Sponge! Great idea.
@@LisaMT1218 the acidity in oranges is enough to prevent the browning reaction and lemon juice doesn't meld as well with the delicate flavor of peach, as well as orange juice.
@@LisaMT1218 lemons are more sour than oranges. I tried with lemons but it overpowered the peach flavor to me so I started using oranges. You can use lemon if you like though. Your preference.
@@cinemaocd1752 it sure would!
Blackberry and raspberry butter as well. You have inspired me. Thank you!❤
You are so encouraging and joyful! Thank you!
That looks scrumptious. Thumbprint cookies with strawberry butter? Omg, yes please. You make great tutorials.
Loving the kitchen. Never heard of strawberry butter. Now a must have.
This one really hits home, my parents made the best strawberry jam I’ve ever tasted. I honestly like the idea of a fruit butter, I’ve had apple butter so the same flavor but with strawberry’s. Thank you for the nice tutorial, very descriptive and definitely something I’m going to try with my wife.
Simply wonderful.
I can't wait to make it one day. It sounds delicious. Everything you make is great😂❤❤

Getting that "pop" right when you were talking about it was beyond perfect!!! Omg it literally gave me nostalgia goosebumps!! TOTALLY SATISFYINGLY AWESOME!!❤❤🍓🍓🍋❤❤🍓🍓🍋🍋❤❤
I've always made my mother's strawberry jam recipe, which only has strawberries and sugar in it. It's a family favorite. I just might have to try this recipe for something different! THANKS!
Nice presentation. Thank you for the great suggestion. Fruit butter is yummy. Have not had strawberry butter.
Love your work man…. So yummy! Thank you!
Thanks for sharing
Glad I came across your video. I have a box peaches and wanted to make more than just canned peaches.
Great recipe! I will definitely be trying this next week! Also, your kitchen is just perfection! Whoever decorated it has an amazing eye.👏
You convinced me not to use pectin in my jam. Today I made a blackberry jam/butter that I put through a hand food processor to remove the seeds. I added lemon zest and bourbon vanilla paste to the berry mix. The flavor is amazing!! Thanks all the great recipes.
This was interesting, fun, well-explained….at just the right pace. Thank you❤
Sugar and lemon are important to
fight spoilage. Hells preserve the product. Apple butter…any fruit butter, is all about the reduction. Reduce it down to a paste almost.
Thanks for sharing, will be making 👍
I make this every other day for my Greek yogurt but never thought to batch it. Thank you!
I’m a new subscriber & this has quickly become one of my top 2 favorite channels!
looks soooo yummy
I love that kettle.
This was great! I would love to see more canning videos :D
Your kitchen design is gorgeous! And the strawberry fruit butter couldn't have been prepared in a more welcoming environment. Watching this video was so inspirational in so many ways. It was truly delightful! I just started to grow strawberries again so I don't have nearly enough to make even a few jars of this butter, but my local farmers' mkt should. Thank you so much for sharing this recipe!
Jelly foam on saltine crackers-a child’ (or adult’s) delight!! I’m not alone, others know it. 😊
Have you ever made cherry butter? Wondering if it would need some added fruit juice?
I've always wondered the difference between jam & butter....now I know 😊. Thanks so much another amazing recipe to try. 13:35
I am a teacher. I made strawberry jam in the tiny jars for all my grade 8 students one year for Christmas. The boys all opened them and ate the jam before they even left the school. 😅
kaleb, another winner i'm sure, its anything like your rhubarb butter...can't wait to try. thx marie from canada
SIMPLE SAID & DONE💕Thanks👏👏☕️
