  • This basil pesto chicken pesto pasta eaten as meal prep or not, is one of the simplest recipes to make with such incredible full of flavour results. The flavour in this dish is extremely fresh and well balanced and of course, the chicken is extremely tender and juicy.
    Also in the recipe, I'll show you how to cook perfect chicken breast. Regardless if you use chicken in this recipe, this method will ensure you eat perfect chicken every time without failure. Please enjoy this delicious meal prep recipe that will set you up for the week or a rainy day when you can't be bothered to cook.

    Chicken & Pasta -
    2 Tbsp (40ml) - Olive Oil (Divided)
    750g (1.6lbs) - Chicken Breast or Thigh (See Note)
    2 tsp (5g) - Onion Powder
    2 tsp (5g) - Garlic Powder
    Seasoning To Taste
    750g (1.6lbs) - Penne or Pasta of Choice
    Basil Pesto -
    2-3 - Garlic Cloves, Minced (See Note)
    30g (1.06oz) - Parmesan Cheese, Freshly Grated
    30g (1.06oz) - Pinenuts, Toasted (See Note)
    1/2 - Lemon, Juiced
    2 - Bunches Basil, Picked + Stems, Chopped
    1/2 Cup (125ml) - Extra Virgin Olive Oil
    Seasoning To Taste
    Recipe Notes -
    Chicken Thigh -
    If using chicken thigh, sear for 4 minutes on each side and instead of baking for 13 minutes, do so for 16 minutes.
    Garlic -
    The flavour from 2 garlic cloves would be enough for most palettes. If you really like garlic, use 3 cloves. Like is said in the video, it's easy to add but once in, it cant be removed.
    Pinenuts -
    Pinenuts can be very expensive and can be substituted with a wide range of nuts such as macadamia, almonds, cashews and walnuts and pistachios. If allergies are a concern, they can be left out completely.
    To store, place the containers in the fridge for up to 4 days and in the freezer for up to 3 months. Thaw in the fridge overnight, before reheating or taking it out with you.
    It’s recommended to freeze and thaw overnight when needed, especially if you know you won't eat it all within the 3-day time period
    To heat, place in the microwave, pop the air vent on the lid of the container and heat in bursts until the chicken is hot in the centre.

    Pasta recipes and rice bowl recipes are always my favorite coz of the amount of variety that can be done with em. Great watch as always! And i know meal prepping can get boring as the years go by but the amount of convenience midweek is unbeatable and with awesome recipes like this you're able to make something that's still healthy but tastes awesome without having to get stuck in the routine of the boring monotonous recipes.

    I highly recommend growing your own basil especially if you make a lot of italian dishes. It's easy to grow and keeps your kitchen (you can grow on a windowsill) smelling amazing.

    Tip I learnt whilst working at an Italian restaurant.
    Pulse the pesto when blending because if you just let it blend you will cook the basil slightly creating a bitter taste.

    I love this! I make something similar but I add zucchini and cherry tomatoes, adds volume makes it more healthy and goes really well with the pesto.

    Hey jack, im a student so your meal prep videos are a life saver, but like most dorms room mine doesnt have an oven, so it would be amazing if you could maybe put alternative cooking methods in the description. Anyways great content as always!

      Obviously I'm not Jack and he can delete this if he doesn't think it's helpful or prefers to provide his own amendments but for this recipe you can toast the pine nuts (or any unroasted nuts) on a pan over low heat until they start turning brown and for the chicken, either butterfly the breasts or place them between cling film and use a meat hammer to bash them into a thinner and fairly uniform thickness so it cooks evenly and quickly enough so they don't become dry.

      You can always finish cooking the chicken at a pan. With just some practice you will find the appropriate cooking time. You can also cut it in smaller pieces so you are sure it will be fully cooked. You can also put the peanuts in the pan and move them as they are being cooked so they dont burn!

    I love how you make plenty so that you have future, easy prepared meals.
    In these times of hardships, I wish you would cover your pans - it means less energy is needed.
    Also using the oven - you said 12 minutes in oven - so I would turn the oven off after nine minutes - leaving the oven door closed - then I'd open it after thirteen minutes - the chicken would keep cooking and I save 3 minutes of electricity.
    Pans I use lids - if I'm boiling something and recipe says 15 minutes, I will turn off the heat after 12 minutes but leave the lid on - the food will continue to cook in the liquid.
    I always put two dishes in the microwave when I'm heating food up - place them one on top of the other. Again I'm saving energy, but I'm also making sure the food is cooking all the way through - when you stack you don't get cold centres anymore.

    I just made this, it took me 2 hours. I torched the pine nuts in just 2 minutes. Parchment went with it too. Broil on low. Didn't preheat the oven for the chicken. Didn't have a big enough bowl to mix this amount of food. I made 4 meals with half of it. Ate the rest for dinner. Forgot to add it was fcking delicious, definitely don't forget the lemon squeeze at the end as it makes it irresistible.

    Hi chef, great video! What is your opinion on pans with non-stick coating? Heard mixed opinions about how healthy they are while cooking. Which pans do you use and why? Might be an interesting video idea to do as well about your cooking gear where you explain which pans/tools you use for specific ingredients. Looking forward to hearing from you, thanks!

      Thank you! I rarely ever use non stick and am not a fan. The coating that’s on it won’t allow for any sauces to reduce properly and they don’t create very good sears on meats and veggies. Also, like you said, some can be quite toxic. I use stainless steel with a copper base. It’s one of the best materials to use as well as cast iron. They both retain and distribute heat very well, will last a lifetime if well looked after and you can cook pretty much anything in them 😊

    Great video! Just a small correction, searing the meat does not keep moisture locked in. That is an old wives tale that is probably one of the most common myths in cooking. It DOES add texture and browned flavors, and is still a good idea.

    Hi Jack , I love your recipes. Just with the pesto is it ok to freeze it?

      Great to hear, thank you. Yes, the pesto is fine to freeze. You may lose a little bit of colour upon thawing but other than that it’s completely fine

    I just wanted to suggest rounding up or down for converted cooking temperatures. As you can understand, no one attempts to set their oven to 390F, so I feel it would be better just to round up to 400F or round down to 375F to avoid confusion.

      I get what you’re saying. If I say that though it will be incorrect cooking temperatures. I’m very precise as this is what’s needed to achieve perfect results. If it’s 400 it will over cook and if it’s 375 it will still be raw. That 390 is perfect. 🙏

      I hear you, but Fahrenheit offers more flexibility than Celsius, and you're already rounding anyway since 390F technically converts to 198.889C, and 200c converts to 392F. Western ovens adjust in 25-degree increments, so anything in between is not something we aim for. I assume it's the same for you. Adding 8°F (4°C) is not going to make a drastic difference.
      So, although it's not technically precise, 190C is 400F. Of course, when cooking proteins, it's more important to check the internal temperature than it is to rely on precise cooking times.
      For the record, I'm not trying to give you a hard time. You are my absolute favorite chef on CZcams and every recipe of yours that I have cooked has been amazing. 🤌

    How do you determine the nutrition facts when you mixed it all together ??? That’s where i struggle with meal prepping

      It’s put through a nutrition calculator. It’s based on average values from each ingredient and multiplied to create a whole amount

    Very pro as usual. If I may ad, wash before and after dealing with chicken :-) and for the garlic, remove the central green part (undigest and bad taste). But very nice recipies!

      Thank you! Do you mean wash the chicken? If so never wash chicken due to bacteria spreading throughout your kitchen. The garlic I use doesn’t have a bad flavour with the germ 😊
