YUM! This is one of my favorite ways to use pesto. I grow lots of basil in the summer, and I make pesto to last me throughout the year. Vacuum sealed in the freezer that stuff will last indefinitely, so you can make it well in advance & just whip out a bag when you need it.
Toasting the nuts isn't necessary, but it does add a nice layer of flavor. Pine nuts aren't cheap, and many people opt for walnuts instead, but I'm not a big fan of walnut flavor. I've found that Brazil nuts come pretty close to pine nuts for something like this at 1/4 the cost of pine nuts. I think they actually taste better. I crush or rough chop them, then toast them in a pan before assembling my pesto.

Hi Natalie...from an "Italian" point of view...Pesto is one of those things that are BEST made fresh from scratch, using only the freshest ingredients. The jarred sauces taste too artificially strong and have an almost sour aroma.
This recipe is perfect here. Also, add a few drops of lemon juice to keep the vibrant color, and preserve tight in a mason jar. Enjoy!

I just made this. I used chicken, thigh, meat, and Roma tomatoes, because that’s what I had, and I did not use as much oil and my pesto a store-bought from Costco. It’s a very tasty dish. I’m enjoying it very much. Tastes like it came from a restaurant.

So delicious! I did use 12 oz of pasta since that was in the box. But I don’t think I could fit a whole pound in my very large skillet! The pesto was great, so I know what to do with my big basil bush. My farmer ancestors are amazed I can grow anything!

Toasting does give the Pesto a richer flavor...try pan toasting (more controlled) rather than over toasting. Good luck!

Honestly I don't think there is a huge difference in the quality pine nuts
Sometimes I sub walnuts because pine nuts are so expensive. It tastes delicious.

If you have to resort to using pre-made pesto--I recommend Buitoni in the refrigerated section. It's the only one with all the traditional ingredients that belong in pesto. And, by the way, I take issue with the statement "lower calorie" for this recipe. I don't think it is.

Pignoli (or pine) nuts are the original Italian way of making authentic Pesto.
Can be hard to find, try Whole Foods, or a specialty shop that carries fruits, nuts, seeds, etc.

You made it happen! Those pine nuts are expensive, I replace the pine nuts with walnuts most times. Not as good as pine nuts but a close substitute. JS
