For recipe 3, why aren't the tomatoes blended before being added to the dish?
Wow, I didn't know you had a newsletter, really appreciate it!
Carbonara I thought was pretty quick. Gonna try try Gnocchi now, thanks!
Just found your channel and LOVING it! What brand of cheddar cheese powder do you use? Thanks!
Here is why this content has been hitting for me: you are helping remove decision fatigue/overwhelm, you're giving fast and uncomplicated options, and I can easily incorporate this for when I'm tracking macros and eating 80/20. Freaking appreciate this kind of approach so much, Ethan!
Most of the Asian noodle dishes I know (and I swapped noodles with linguine/spaghetti pasta) can be done under 15 minutes, 35 minutes in total, preparation, eating, and cleanup. So don't go overboard with decision fatigue ;) Also try Spaghetti Aglio e Olio (+ expanded with more vegetables, like broccoli or mushrooms).
I double his comments. Well said.
I agree! And I love when he breaks down the science of things but in a easy to understand way
Removing decision fatigue is exactly what I love so much about this channel. Well said!
@@pavel9652 I do garlic and oil pasta. I load it with veggies tomatoes, broccoli, asparagus, and cauliflower.
Pro tip, you can just pan fry gnocci they become crispy on the outside and stay chewy on the inside. Its one of my favorite textures to eat.
Baking them on a sheet pan also does this! It's one of my gf and my favorite meals, just pop some sausage, some peppers, some sundried tomato, and gnocchi onto a sheet pan and bake. Super easy and delicious
@@aaronjosephs2560 bake for how long?
@@chawndel8279 I usually do about 10 mins, shuffle it around a bit, and do another 10. At 375-400. I toss up with a pinch of salt, olive oil, and red pepper flakes beforehand, and add some grated parm in the last 2 minutes
@@aaronjosephs2560 Thank you!
Don't tempt me with a good time.
I made the sausage/broccolini one tonight for my family. It was a big hit and as fast as advertised (a real rarity for CZcams recipes). 10/10 will make it again!
Please please please please more videos helping with decision fatigue!! This is phenomenal work, Ethan.
Seconded! Especially for folks like me with executive function challenges (e.g. autism, ADHD, depression, anxiety… or even just a stressful transitional time like moving or having a new baby)… ANYTHING that cuts down on big decisions is going to help so much!!!
@@emilysmith2965 you have autism, adhd, depression, and anxiety.. and you're also moving and have a new baby? sounds like problems i only ever hear about on the internet.
I HATE being asked to sign up for newsletters, but I can't wait to receive yours!! 👍
You just nail it everytime.
I was thinking the same. This latest segment was a bullseye.
As a parent with young eaters, weekday pasta recipients are an absolute go to. As you mentioned, it’s also a great way to get some different veggies into their diet. (Only downside in the lack of spcy😢)
Easy to make it spicy!
Chili oil on top of pasta is absolutely 11/10
@@zachsmcl yeah that’s a great idea. It’s not exactly the same as cooking with spice, but the chili oil is a good options
Or add red chili flakes whenever you are sautéing garlic or simmering a sauce! That’s pretty authentic
@@steven4966 I know, I was saying I can’t really do that anymore bc the kiddos will complain. Have to add heat at the end.
Big tip coming from an Italian. Let your water boil first, then add your nice pinch of salt! This decreases the boiling time of your water. Putting pasta into vigorously boiling water is rule 1 in the Italian kitchen as it preserves the texture of the pasta! Nice recipes, keep up the awesome work!!
What i love about Ethan's channel is that he zooms out of the actual recipes and provides more generalized methods of cooking. He doesn't just say "hey buy this ingredient list and lets make this!" like other channels. He shows you ways to make FOOD with what ingredients you may have laying around. He prioritizes function and utility rather than big fancy recipes. Perfect for us busy folk who can't afford to buy groceries every other night.
Great suggestions- as always will be incorporating this into my routine! As a side note my partner's Italian mama has solved evening decision fatigue over dinner by always deciding what's for dinner at breakfast. She asks everyone, puts the ingredients on the counter (including whatever needs defrosting) so when she comes to make it hours later it's just a task, not a "what are we having?", "Do we have the ingredients", "Who's coming for dinner" parade. I have started doing this too, and it's so simple, but so effective!
Awesome recipes as always!
One thing I've done lately is swap most of my pasta dishes over to chickpea / lentil pastas for a slightly healthier kick.
Would love a video looking at the differences in taste and uses for some of the new pastas that have come out over the last few years!
Yeah, been checking out the different pastas made with "healthier ingredients" (beans, alternative grains, veggies) and would love to see a video comparison with tips for getting the healthy pasta to turn out right instead of turn into mush.😫
@@McRootbeer Agreed ... I eat very low carb, so wheat pasta is a major treat for me. I've tried bean-based pastas, but they all turn to mush with even a minute of extra cooking ... and leftovers are a complete disaster.
My favorite pasta is Barilla Plus- it has extra protein and fiber and it has a good texture that does great with leftovers.
Costoc has cauliflower gnocchi that's pretty good, I pan fry from frozen so takes maybe as much time as boiling water and cooking normal gnocchi.
I don’t think I’ve ever commented on a video, but I wanted to say this a great idea
I will always appreciate the nature of your practical-application cooking guides. Taking the consideration of external things like “I just got home from work and really want something in the next 30 minutes that isn’t takeout” and working around that is huge. Thank you as always for your videos!
Lemon caper pasta is a godsend for a quick week meal (I cook it for lunch when I work from home because it’s so fast). Start boiling water for pasta, and noodle works but I prefer long flat shaped, once the pasta is cooking grab a metal bowl and add chili flakes, olive oil, zest of a lemon, lemon juice, and sardines (I like using the smoked fillets). Once pasta is done cooking add it to the metal bowl and mix until sauce is emulsified, add as much water as needed. Then add capers and garnish with lemon zest. All ingredients are pantry stables and it’s done in 10-15 minutes.
Sounds good... and olive-oil-packed tuna, or canned or smoked salmon, might be a good swap for those who don't like sardines.
very nice. pantry staples is smart cooking
I do this with tuna in olive oil all the time, frying the capers first and garnishing with fried shallots seems to really kick it off
this sounds great
Thank you!
Just got my first newsletter! Ethan dude your knowledge and ways you put the videos together is incomparable, you’re killing it 🔥🔥
Thank you, hope you enjoy it! It's just the beginning, but like my approach to youtube videos I want to make everything as valuable as possible for all of you ✊
One thing I really enjoy about this channel is that the servings being made are great for 1 person, other channels often go for 3-4 servings in one go
Love that you’re on one side super pragmatic, but never lose the fun/creativity with your recipes. You’re content is really up there at the moment!
Definitely one of the best cooking channels out there! I can actually see myself making all the recipes because they are so attainable, with simple ingredients that you can buy everywhere. Appreciate all the ideas so much
dude you have been absolutely killing it with the last couple of videos. I really love this Sunday theme you've started doing.
I agree
Ethan I really appreciate how you have the recipes that are “lower calorie, higher protein” like recipe #2 in this vid. It’s a great health skill learning how to cook like this
You don't even have to boil the gnocchi. Saute it in the oil and you'll get a crispy outside and fluffy inside. I do a sheet pan dinner with them for an easy meal.
This video was a big win for me. I've made the first and third dishes multiple times and cant seem to get enough of them. Thanks for the content its helped me move into the kitchen more instead of always spending my time hovering around a smoker.
Just tried that Gnocchi + Sausage recipe, it was so so so so good. Will be making this much more in the future!
Loveeeeee how you approach meal making in general Ethan! I'm so so so happy you post as you do!
Been loving these meal option videos, you’ve summarized the scrolling and decision fatigue experience very well 😂 gonna give the healthy one a try!!
I love that you're using a wok spatula on this. LOVE mine.
Just signed up for the newsletter! Love your content. Practical, inventive, and super approachable. Thanks for what you do!
Ethan, thanks for making recipes that are so functional for us. You are my favorite cooking CZcamsr
You just read my mind when it comes to recipes - so deserving of your success! Well done
Ethan - great videos and much appreciated! I like how you obviously research your recipes and then give us step-by-step instructions. Thank you! 🙂🙂👍👍
Ethan I love your outlook on things and your mentality on how the HEALTH portion of things are, despite whether or not its a "cheat" meal. Thanks for sharing brother!
as someone about to move out and cook for myself (and not for the whole family) these videos are super helpful! thanks Ethan!
A quick pasta recipe my family made often was a simple salmon cream pasta.
The ingredients for roughly 4 portions are:
*as much pasta as you want* (these days i try to include more vegetables than pasta)
*~200g salmon* (other fish work as well, but for this i like salmon the most, even if it's not really sustainable)
*at least 250g of heavy cream* (less cream makes a stronger tasting sauce; adjust as you like)
*~2 Tablespoons of tomato paste/concentrate
and optionally garlic, which i really like
Simple seasoning works best for my taste, but chili or herbs add a nice touch to the dish. If you want more textures you can top with roasted nuts.
Just lay the salmon into a (high walled) pan and fry a little bit at medium-high heat. When the outside of the fish is cooked but the inside is still raw, add the tomato concentrate and fry for 1-2 Minutes.
During this time Ii ike to break apart the fish into large pieces and coat them in the other ingredients.
If you want to include spices or garlic, you can add them with the tomato concentrate.
Pour in the heavy cream and cook until the sauce thickens. (Use a lid to avoid splatter!)
After mixing the salmon should be in medium-small pieces.
All those steps should take about 10 Minutes, depending on the ingredient amounts.
I think the tomato concentrate is called tomato paste in English. At least it’s the real thick one, otherwise, you were correct in calling it purée.
ETA: now that I read all the way to the end (the rude commenter before me distracted me, sorry), I’m pretty sure it’s tomato paste, cause you usually want to add the herbs and spices with the tomato paste, or just after, cause you want to fry the paste to cook out the taste from the tin, and you also want to fry spices to bring out their flavor.
@@bnortonm Maybe you just have an under-developed palate, or are just rude. 🤷🏻♀️
@@TheBLGL thanks for the info, i've made it "tomato paste/concentrate" now
hopefully people understand you want to use the strong stuff 😅
One of our favourite family pastas is simple and similar to what you've got going on here. Slap some diced onion and aromatics in a pan, throw in 200g of cream cheese (low fat works), a stock cube, 1 litre of boiling water and 500g of pasta. Slow cook until the sauce is thickened and a little runnier than you'd like, pull from heat, lid on for 3 minutes, after those 3 minutes pass add a handful of grated cheese of choice, and a jar (or half if you prefer) of red pesto, ideally the one with chilli in it. Not the healthiest, but serves a family of 5 nicely and everyone enjoys it.
Thanks for this!
love this framework!! what a great way to think about how to organize dinner and bypass decision fatigue. Thanks for the ideas!!
I made a big mistake watching this video....before I had finished making supper. Your recipes look amazing! I can't wait to give these a try!
The last pasta dish was so hearty and comforting, such a great winter meal to curl up on the couch with
As a busy parent I really appreciate videos like this! Everything looks delicious!
Was just saying how much I love sausage and pasta! Perfect timing; will try them out!
I love the newsletter, thank you for all your hard work Ethan! Your videos are great and I appreciate how you break the cooking process down to show how you can craft your own recipes with what you have once you understand how dishes are crafted
This was my favorite video youve ever made. Great job! Would love more like this next year
Loving the illustration at 1:26. It's a really cool art style that helps visualize each component of the dish. I like the decision frame work. It can be easy to be overwhelmed with endless choices in the kitchen but sometimes if we thing about our needs we can figure out what suits us best. All of the pastas here look great! I'm going to try that white cheddar mac & cheese post workout.
I just want to say that I really appreciate your channel. I was never taught to cook growing up, but your content has really made cooking accessible for me. You make everything seem so simple and easy to do - without crazy or expensive ingredients - and it motivates me to keep trying! Plus, your "frameworks" are unique and really appeal to my learning style. Keep up the awesome work!
You've been really influential in my decision process when it comes to cooking for dinner, thank you for these detailed videos describing the process and the why - especially when using ratios / using different food types to help with substitution and remixing. I look forward to the newsletter, the graphics will help with taking notes instead of taking screenshots :)
Ethan the quality of the imagaes like the Gnocci is INSANE!! Whoever did the art is doing an amazing job!!
Absolutely inspired to try the gnocchi broccolini sausage one.
Thanks for your vids Ethan, always an inspiration for cooking and simply brilliant video quality!
I loved the visual you did at 5:15. You could have just put in a static pie chart or even some text, but you went the route of high production value even for that 5 second segment and it shows. Can’t wait to try these dishes this week.
I just made the first pasta dish and it is now one of my favorite things I have ever made.
this video was so amazing i felt actually motivated to cook some pasta right then n there :D please make more of these decision flowchart videos !!!
Hey man I want to say as a fan you are a truly interesting youtuber. I see so much great work in all these videos and I'm never even slightly disappointed. Keep it up man because no matter what anyone says, you are doing a fantastic job at every aspect of this channel.
I had the best dinner today, thank you!!!!
Yes for simple dishes! I love recipes with few ingredients and easy steps.
Man that gnocchi absolutely slaps! Made it a couple times this week. Thanks for all your content Ethan!
I added half a chopped onion to the fast pasta. Wonderful!
Gnocchi is absolutely fabulous in the air fryer! ... tastes like ravioli and can be dipped in marinara sauce 👍🏾
Yes... You are indeed welcome.
😘
Your channel is great ... thanks for your ideas and efforts to bring nice home meals to everyone, will try the firs recipe tonight
I can't stop watching your cooking. You captured my attention when you said you had been overweight. I too have been extremely overweight and have lost 100 lbs so far. And cooking advice is welcome.
Your content is always a perfect mixture of education for new cooks, mastery for the those well-versed, and entertainment through excellent editing/filmography. Thank you.
Exactly! ☆
illustration is great, hope you keep making them
Amazing! This saves so much time and money. Also it's a relief to have these ideas for when you want to have quick meal 👌🏻 love it
I like this format. A quick recipe, healthy one then the indulgent one
bro all of your videos are such good quality and engaging
This guy is actually so helpful
Mmmmmmm
Another great video brother.
Healthy pasta - balance is key.
Tried this recipe tonight and am enjoying it right now! Used Andouille sausage and spinach, cause it's what I had on hand. Fantastic!
Yer killin’ me !!!! I’m going to try all of these.
Looking forward to making these 😋
All three are fantastic and so simple..for the 2nd one I will add a little sauteed mushroom. 👌👌
Merry Christmas to you too Ethan 🎄🎁🎄
Great tips as always. I do a very similar "healthy" white cheddar mac n cheese as well, and it's basically the exact same recipe, but instead of sour cream I use cottage cheese blended until smooth for higher protein content and cheesier taste
What white cheddar cheese powder do you use?
@@brenna0323 I typically use the packets that come in boxes of white cheddar mac n cheese - I use brands like Goodles or Banza, but it can be any brand you want. I just like using that pasta bc it has high protein as well
Solid!! As always!! Keep doing what you're doing!!
Thats why i love this guy, you dont have to take out carbs from your diet to be healthy , just make and cook your own food with good and fresh quality products
I totally loved the creamy tomato sausage and so did my husband. We will be making that one’s many versions again and again. Now for the creamy mac’n cheese…
You became my go to food youtuber within the span of watching 3 of your CZcams-Videos.
Those illustrations are dope
Love your videos! Very well edited!
As usual some superb recipes. For my own variant on the second one I like to add some nutritional yeast and/or sulemani namak to make the cheesy flavour pop even more.
I tried the gnocchi dish today and it was so good and a little spicy but I loved it! Such a simple but amazing recipe.
Video quality is *chef kiss
Keep up the good work Ethan!!!!
Thanks for the newsletter. I'll definitely check it out!
Love your video thanks for the tips!!
Hey, i really liked the drawing that you used on the first recipe.
i’ve made the salcicca, pomodoro e panna twice now. it is such a great and versatile pasta dish. i want to experiment with it now too
Yum! Healthy, fast…and lamby too❤️🙏🏼👏
Lol. My weeknight decision fatigue always results in the 3 ingredient pasta sauce and some noodles all covered in cheese. Never been dissatisfied with it (so happy you taught me that recipe! )
I love these series! Soooo yummy
I made the last pasta dish, added a lot more cheese and fresh rosemary at the end. It does not disappoint.
Great stuff as always - love how you always eat like you've never eaten before LOL
3:31 gnocchi is especially fantastic in one pot meals. Other than that it's an underrated healthy food, since 250g of it which is 350kcal (same as 100g of dry rice) is not only way more delicious than rice but also10 times more filling
Great recipes! Will try them for sure.
Your pasta graphic looks great!!
1:30 This graphic is awesome!
What I've learned from making a shit load of different pastas over the years is that the best pasta dishes are honestly the ones that have not that many ingredients but the ingredients that ARE in it are all stars in their own right. With pasta you just have to keep it simple and honest which will give you the most flavor in my opinion.
I tried making the gnocchi dish and it was so good!!🤤
I LOVE YOUR VIDEOS. Thank you.
If you did just a pasta series, I would eat that up.
The sausage tomato pasta turned out AMAZING!! I just used Trader Joe’s brand diced tomatoes and it worked out.
i (for no good reason) find ethan so annoying but his videos are really good quality and appropriate for my situation, so im a big fan of this newsletter!
Got your home lore ad in the video! This video was so good need to by that powered cheese. You need to get a sponsorship with them at this point
Absolute goat of cooking videos
