45 Minute Mexican Dinner || Stewed Beef w/ Anaheim Pepper Beans & Rice

Beef Ingredients:
3tbsps of Oil
2lbs Chuck Roast/Stew Beef cut into bite size chunks
1 Medium Onion Small Diced
1lb Roma tomatoes
1-3 Serranos OR Jalapeños
4-6 cloves of Garlic OR 2tbsps garlic powder
1 tbsp dry Oregano
2 tsps ground Cumin
2.5 cups of Water or stock
Salt & pepper to taste
Bean Ingredients:
1.5
tbsps oil
1 cup dry beans, cooked
1/3 lb Roma tomatoes small diced
1/2 Onion small diced
4 Anaheim peppers deseeded & small diced OR 1 bell pepper
4-6 cloves of Garlic
2 tsps dry Oregano
1 tsp ground Cumin
Salt & pepper to taste
Enough reserved bean broth to simmer in

Yummmm! I am so impressed with your garlic haul! I'm a new gardener also but my poor little garlics all died, except I did get 1 head about the size of a half dollar. :)

Thank you! I hope your next round of garlic grows big and beautiful! I basically plant mine, water them in, l maybe once a week, (or every 2 weeks if it’s not hot anymore) until the green tops sprout and then after that I just ignore them because it rains enough here in the fall and winter I don’t have to think about it. When spring rolls around I fertilize and continue ignoring. I basically don’t water them at all because rain is enough. They don’t like to be in wet soil so I let the soil get dry before I water again if I have to.
