INGREDIENTS:
1LB 85/15 Ground beef
2 ancho chiles
4 guajillo
3 chile de árbol
1/4 onion
6 garlic cloves
2 bay leaves
1in cinnamon stick
1/4 tsp peppercorns
2 tsps dried thyme
1/4 tsp coriander
1/8 tsp ground cloves
1 tsp ground cumin
1 tsp anatto powder (achiote)
1 tbsp fresh oregano (or 1 tsp dry)
Salt to taste
5 Tbsps apple cider vinegar
