Not gonna lie when they said "What is the dish you're the most confident in?" and Eddie immediately said "Well that's not exactly why I picked my dish, I'm a terrible cook" I fully expected him to continue with "instead of trying to rise up to your level I'm going to drag you both down to mine" which to be honest isn't all that far off from what happened

With pasta like that it doesn’t matter really. The starch is coming out whether you stir it early or intentionally or frequently and vigorously. Plus with pasta water you want more starch in it which is exactly why he used the flour/water shaker in his dish to give more starch into it.

I'd kill for one of these with Julian Solomita! His "aires kitchen" chaos with Josh's chaos would be so fun to watch. Also it would be so fun to see Josh and Nicole cook vegan with Julian. 🙏

Josh is like 6'2". In the first clip, they look relatively the same size but in the last clip, Josh is towering over Eddy by like 4 inches. Someone had to be standing on a platform at some point.

It's criminal how good Eddy fits in with the Mythical crew. I can imagine him being a part of it no problem.

Salty like the sea is for fresh pasta. It cooks in less than a couple minutes and isn't dehydrated so it doesn't take up a lot of water. If you use dry pasta it will take up a bunch of water

Even in that case that would be too salty. Most people have no idea how insanely salty the ocean is. Salty as the sea would be ~10 tablespoons of salt per gallon of water or a little over a quarter pound (0.28)
Salty like the sea would require more than a hundred grams of salt for each liter of water- the reason why that phrase exists is because people are way too apprehensive about how much salt to use
This was the most cheffy Josh has been on this channel in a while. Up until he revealed his master plan with the protein shaker. Then he was back to his normal Josh-ness. Loved it!

I use a little sodium citrate, which is absolutely 100 percent cheating, but I don't care. If it's good enough for mac-and-cheese, it's good enough for cacio e pepe, which is just a more pretentious mac and cheese.
Keep trying! It's so hard to get right, but once you do it's like muscle memory
just do it like Josh did in the bowl (MINUS THAT FLOUR WATER) its really not that hard
I just don't use the bowl start with my oil or butter then add the pasta water and then the cheese to the pan slowly and it always works out for me

I was really curious as to how Eddy's tempered pace would fit within the high energy/chaotic Mythical Kitchen, and it was delightful! Happy that he got the win on this one too, especially when all the dishes looked so freaking good. I hope they'll have him on GMM too.
I feel the editing becoming slower, and I really appreciate that. Sometimes watching I feel exhausted by how fast you move, the longer shots with more resting time without the videos being longer really make a big difference.

Funny, it suited my ADHD perfectly. Tiktok/shorts recipes with the slaps and 2 second hard cuts, are too much for me. But I always loved Josh's frenzied energy and the video cuts that went along with it

A friend of mine back in high school heard of cacio pepe in our home ec class and came in the next day with a tupperware full of what she claimed was basically what it was...turned out she made white cheddar mac-n-cheeze with a crap ton of black pepper in it! Our teacher was less than pleased lol XD

I feel like there needs to be a “very special episode” in which Nicole learns to lean into flavors.
I feel like there’s a reason she always loses the cooking challenges. I made her “best mac n cheese recipe ever” and it was completely bland and flavorless. I had to basically triple the spice amounts she called for to salvage it.

cambodian here! literally squealed seeing u use kampot peppers bc they are truly SO DIVINE and unlike anything else. just an fyi also!! kampot is pronounced cam-poat (cam like camera and poat like oat but elongating the mmm sound and oh sound 🤩) but if u want a more american/foreigner friendly pronunciation u can go with cam-pot and those are the two diff ways to say it 😅 thank u again for liking our peppers hehe

Josh, you aren't wrong about making starchier water, the pasta water that is used in Italian kitchens to cook fresh pasta is often used multiple times and is thus way starchier than the one-time pasta water we often use at home. But you already know that. ❤
The thing about not being able to see an unattended pot on a stove without stirring a bit is me everyday. Cannot not just give it a spin, it feels wrong 😂

Nicole, you used too much water to boil your pasta. Less water = more starch, and more starch means better emulsification. You could even try cooking your pasta like rice, 1.5 parts water to 1 part pasta, a bit of oil, when the water is nearly cooked out start your emulsion in whatever cooking vessel you chose.
