In Mangalore we hardly get any fresh apricots. Will fresh plums do?
Fresh plums could indeed be used as a substitute for apricots in this recipes, but it's important to note that plums can be juicier than apricots. So, while plums can certainly be used as a substitute, be prepared for a different texture in your final product.

Hi Michael! I just bought some apricots and I will give this a try for sure. I don't have the same paper tins as you do so I guess I will double the recipe and use my 20 cm baking pan. Thanks for sharing it with us!
If you double the recipe, 18cm baking pan will be more suitable. 20cm pan is a bit large. Perhaps you might want to triple the recipe. Wish you all the best. Happy baking.

In baking, every ingredient serves a specific purpose and altering one can significantly impact the final result. When baking with coconut flour, because it's gluten-free, the resulting product may not hold together as well without the addition of extra eggs or other binding agents. Also, coconut flour tends to give a slight coconut flavour to baked goods, and it is much more absorbent than other flour.
It's not a simple direct substitution and may require significant alterations and experimentation in the recipe. The taste, texture, and dietary attributes (like gluten content) of the final product will also be impacted by this substitution.
As such, to maintaining the integrity of my recipes I firmly stand by the principle of not compromising on a good recipe by replacing critical ingredients such as specific types of flour.
