How to make Christmas swiss roll cake "Santa hat yule log cake"

This time I tried a Christmas arrangement of Tsujiguchi-san's roll cake that I made before.
It was delicious and it turned out Christmasy, so I might recommend it, even though it's a bit hard to do.
I changed the taste of editing a little from this time.

[Chocolat dough]
Z - Whole egg: 150g
Z - Granulated sugar A: 72g
X - Egg white: 64g
X - Granulated sugar B: 32g
Y - Cocoa powder: 52g
Y - Butter: 12g
Y - Milk: 12g
1. Sift the cocoa powder twice.
2. Put butter and milk in a small bowl and heat over hot water to about 60°C.
3. Set a baking paper on a baking sheet.
4. In a bowl, mix Z whole eggs and granulated sugar A with a hand mixer over hot water to form a lubricant.
5. Add X egg whites and 1/3 of the granulated sugar B and beat with a hand mixer on high speed
6. Add the other half of the granulated sugar and beat further to incorporate all of it to make a firm meringue.
7. Add the cocoa powder to the Z and combine with a rubber spatula.
8. Pour the warmed Y into the Z and mix with a rubber spatula.
9. Add all the meringue and mix with a rubber spatula to scoop the mixture
10. Preheat the oven to 190°C and bake for 11 minutes.
11. Drop the baking pan from a high place to release the steam.
12. Remove the baking paper and place the baking sheet on top.
[Custard cream]
A - Flour: 10g
A - Cornstarch: 10g
B - Egg yolk: 40g
B - Granulated sugar: 18g
C - Milk: 200g
C - Granulated sugar: 18g
C - Vanilla bean: 2cm
Butter: 16g
1. Mix and sift the flour and cornstarch (A) together.
2. In a bowl, mix egg yolks and granulated sugar (B) until smooth.
3. Add 1 to 2 and mix well with a whisk
4. Put milk, granulated sugar, vanilla bean seeds and pods (C) in a saucepan and bring to a boil.
5. Pour a little of the boiled milk mixture into 3 and stir in the rest.
6. Mix with a whisk over high heat
7. When the mixture starts to thicken and become glossy, remove from heat and add butter.
8. Place a strainer over a bowl and strain the mixture.
Cover the bowl with ice water and chill the custard cream.
Store in the refrigerator.
[Whipping cream]
Whipping cream 35%: 60
Whipping cream 47%: 100
Granulated sugar: 12g
1. Prepare ice water. Blend the whipping cream, add the granulated sugar, and whip on high speed.
When the mixture starts to thicken, change the whipping speed to low and stop when the tip of the cream begins to bow.
[Caramel Sauce]
A - Granulated sugar: 80g
A - Water: 20ml
Fresh cream 35%: 80g
1. In a small saucepan, warm the granulated sugar and water (A).
2. Warm the cream also (can be done in a microwave oven, etc.)
3. When the mixture turns dark brown and the foam changes color, turn off the heat and quickly stir in the cream.
Cool the caramel sauce in ice water, etc. and store in the refrigerator.
[Caramel custard cream]
Custard cream: 120g
Caramel cream: 36g
1. Break up and mix the custard cream and caramel sauce made above.
[Almond Glacage]
A - Partagrassée: 150g
A - Sweet chocolate 64%: 60g
Almond dice: 75g
Bold sesame oil: 15g
[ Method ].
Roast the almond dice in a frying pan or in the oven until lightly browned.
Chop A and dissolve in boiling water.
3. Add the thick white sesame oil and mix in the almonds.
4. Put the mixture around the tart.

This was very different from other videos and felt too rushed for me personally. I liked the chill nature of the other videos, and the funny little additions. To me, this felt like every other cooking video out there, and that's not what I expected from this channel. But as long as you enjoy it, don't go back just because some of us liked the other style. That being said, I did miss it.

I only watch one channel regularly that's devoted to food (this one ) and have no plans to make the sweets and cakes I see here. Should I however manage to win the lottery ( I don't do it ) I would like to hire you for a day to make your amazing creations for me. I would then give them to my friends and family and pass them off as my own work ( I don't eat sugar either ) but seriously you have the best cake/choccy channel on youtube in my opinion with great production.
