The SHIMMY: Is This Really Necessary from Fellow Products?

  • Fellow Products just released the Shimmy, which is a coffee sieve that removes fines from your grind under 200 microns. I've been asked several questions about it and have wondered myself is this really worth it and who is it for? Well, here is the video for those questions.

    I ordered one today. It's partly just morbid curiosity, partly frustration with fines (I roast and drink a lot of naturals) and partly because I think it could be interesting for cupping, where clarity is a priority. I grind on a Baratza Encore at home, and it does a great job most of the time, but when I brew natural coffees especially I have trouble with fines!

    I like to drink espresso and pour over coffee, but it is hard to find a grinder which do both good. So I decided for a espresso grinder and use the shimmy when I want a pour over. For me still better than 2 grinders

    Sifting grounds is a complex choice because you'll then need to adjust your recipe for the sifted grounds to get the best flavor. You'll grind finer, basically. Using the Kruve, it's much more complex, but that's actually fun bc I didn't get a Kruve so that I could have a simple cup, I use it to control, experiment, and learn.
    I've found some coffees taste more complex with the fines left in, and others taste clearer sifted, and therefore I can sense the complexity that fines can muddy. If I can't get an interesting cup out of a coffee, I can at least use interesting sifting techniques like re-grinding boulders and keeping the fines from those in as a compromise.

    I'm the market. I have a Breville Smart Grinder Pro and have reached the point of diminishing returns making pour over via the V60. I love my Ethiopians with juicy flavors, and the fine particles cause over-extraction that leave a bitter taste after the first minute of immersion, even with a good bloom. They also cause it via clogging the filter and thus increasing the brew time. I've tried using a paper towel and a metal sieve, but it took too much time and created too much waste. I'll try to update this comment with my results but it won't be here for at least a week.

    I had to double check the video and take a screenshot, but I believe you have some huge boulders in that brew you filmed. Did you grind that on the niche? What setting did you use?

      No, if you look at the grinder that was used in the video it is the Hario Skerton. I intentionally used a less than optimal hand grinder for the video.

    And yes, it's overpriced! If you drop $50 on a cheap Burr grinder and plan to buy a sifter, you can drop $50 more to get a decent grinder which can give you a much better cup right away
    On the other hand, if you already own a top tier hand (or electric) grinder sifting is not necessary to get a delicious cup of coffee unless you're a coffee scientist or pro barista looking for ultimate recipes and perfection, but again perfection is relative

      Yep, for sure! If you're already going to nerd out enough to think about sifting your coffee with a higher end grinder might as well go with a Kruve too.

    Even the best and most expensive grinders make siftable fines. Even Fellow. I have a Kruve and only use the finest screen.. Im getting out the finest of the fines.. My cups are sweeter and cleaner on the same grind, temp and dwell.. if they're worthless, why are they used by many competitors? I drink 1 to 2 cups a day want to have that great cup. Kruve usage sucks.

    I stopped drinking coffee 5 years ago and now I'm more into tea so I'm not coffee dependent, once in a while, Ill take a sip of them beans ^_^

    The audio on this video was so distracting for me that it made it difficult to watch. The music itself is neutral and non-offensive, but instead of background music, it is in the foreground and overpowers the person speaking. Weird choice of video production.

      Beats me why music is thought to be necessary at all. We’re here to listen to what’s being said, not to have a boogie. And while I’m here, what’s with this ‘seev’ nonsense? It’s pronounced ‘siv’.
